Crispy Baked Gluten-Free Chicken Tenders

While both items are now a part of my healthy life, much of my love for them stems from a time in my life when I treated my body like a temple…with a handful of crap in it bucket.

A few weeks ago, with extreme procrastination, I spent a solid 2 hours browsing old college photos instead of writing. Because they’re hidden in a separate library from my food images, and I don’t do deep dives that often. But once I start watching, it’s like driving a Jaws off the side of the highway, and I can’t take my eyes off it.

It’s an apt analogy, because while scrolling through 100+ pre-game photos and selfies of different boyfriends kissing my cheek, the two words that keep popping into my head are: train wreck.

Between the extra 10 pounds on my cheeks, droopy black mascara eyes, and tight tops that required multiple strips of boob tape, it was clear that my college boyfriend was only dating me because of my personality. Fortunately, I have good company. All my friends, bless their late night pizza lover hearts, look equally bloated and horrible. But black makeup can’t hold up, and looking back at our daily diets, I know one of the reasons.

That’s thanks in part to a little tradition called Chicken Finger Friday.

Chicken Finger Friday is a magical day of the weekend when the cafeteria no longer serves its usual healthy pizza and mac and cheese, but only chicken tenders. By noon, the line will stretch from one end of the cafeteria to the other.

I often miss the brazen overeating in college. It’s one of those traditions besides late night pizza that I recall most fondly. These days, you rarely see chicken tenders anywhere except on kids menus.I have yet to come up with a gluten free chicken strips recipe on this site, although this Gluten-Free Crispy Fried Chicken Possibly a stand-in!

So when I was brainstorming recently Gluten-Free Recipe Ideasmy mind went straight to the front of the cafeteria, recreating the gluten-free chicken tenders of my (and their) youth.

The recipe for Crispy Gluten-Free Chicken Tenders

One of the ways I cheat breadcrumbs in my gluten-free chicken breast recipe is by using already crispy breakfast cereal. It works with any protein you want to wrap around, and you can try all different types of savory cereal (or snacks like chips and pretzels) as long as it’s gluten-free.

in this gluten free Crispy Tofu Recipe I used brown rice crisps (they call them off-brand Rice Krispies at Whole Foods).And for these Gluten Free Crab Cakes I used GF pretzels. But in this recipe, I opted for nachos that have been fried in the food processor!

The beauty of this Baked Nacho Chicken Tenders recipe is that you don’t need to fry the chicken strips to get them crispy. All you need is something to stick the crushed grains to the meat.

In this case, I use Dijon beaten eggs for extra flavor.

To make these egg free you could easily use Dijon and possibly vegan mayonnaise if they don’t adhere properly.

Can these Baked Nacho Chicken Tenders be low FODMAP?

I use garlic in the Dijon mix, but if you omit it, these chicken tenders can be low FODMAP without any other modifications. If you can’t stand corn, just switch to brown rice cereal. But Kellogg’s corn flakes are certified low FODMAP on the Monash FODMAP app.

Finally, these gluten-free chicken feet are baked, not fried, which means if you’ve got a beer belly and a college student appetite, you can eat more before your face looks like a chipmunk a lot of.

Crispy Baked Gluten-Free Chicken Tenders

This crunchy gluten-free chicken tenders recipe is a quick and easy gluten-free dinner option.   • 3 cup Gluten Free Corn Flakes Preferably organic, non-GMO
  • 1/2 teaspoon chili
  • 1/2 teaspoon sea ​​salt
  • 1 tablespoon olive oil
  • 1/4 cup dijon mustard
  • 2 garlic cloves chopped (optional)
  • 2 Egg
  • 1 pound Boneless Skinless Chicken Breasts cut into strips

  • Preheat oven to 425 degrees Fahrenheit. Line a baking sheet with parchment paper.

  • In a small food processor, pulse corn flakes with salt and paprika until finely ground. Remove to a shallow bowl and drizzle with olive oil. Stir with a fork until the cornflakes are coated and free from lumps.

  • In a second bowl, beat eggs until smooth.

  • In a large bowl, combine Dijon and garlic. Add chicken and stir until well coated.

  • Working one by one, toss chicken into nacho mixture, shaking off excess. Dip the tenders into the eggs, then place them back in the cornflakes, pressing down until completely covered. Spread the tenders evenly on the baking sheet.

  • Bake in the oven for 15 to 20 minutes, until golden and crisp. Let cool slightly on a tray, then serve with tomato sauce and mustard.
