I love one pot meal…especially when they are let loose in the slow cooker!

This Easy One Pot Chicken and Vegetables Recipe is one of my favorites Crock Pot Dinner! It’s made with succulent chicken thighs, hearty vegetables and a dreamy, mouth-watering sauce.

You can make this chicken and veggie stew recipe as is or customize it with your favorite veggies! Eat it together in the morning, then come home to a perfect dinner!

Ingredients Needed for This Slow Cooker Chicken and Veggie Dinner

This crockpot chicken and veggie recipe is made with the heartiest, healthiest ingredients. Here’s what you need:

  1. butter: I recommend grass fed butter for the best flavor.
  2. Aromatics: We’re creating the flavor base with the classic combination of garlic and onion.
  3. vegetable: Our mixed greens consist of diced carrots, potatoes and celery. Feel free to mix with other vegetables if you like.
  4. Fresh Herbs: You will need fresh thyme, sage, rosemary and oregano. They add so much deliciousness to the meal.
  5. Chicken thighs: I recommend bone-in chicken thighs. They keep better in the crockpot and have the juiciest texture.
  6. Salt and Pepper: Season the chicken before cooking.
  7. Sauce: We are making a delicious and savory sauce with a mix of chicken stock, fish sauce, fresh ginger, red pepper flakes, sea salt and black pepper.

How to Make Slow Cooker Chicken with Vegetables

This slow cooker dinner couldn’t be easier! Simply throw everything in the saucepan, let it cook, then dig in.

  1. combine: Add butter, garlic, onion, carrots, potatoes, celery, and herbs to saucepan. Season with salt and pepper. Pat the chicken dry, season with salt and pepper, and place over the vegetables.
  2. Add the sauce: In a bowl, stir together chicken stock, fish sauce, ginger, red pepper flakes, salt, and pepper. Pour over chicken and vegetables.

Yes! It’s completely safe to add raw chicken to a pot with vegetables as long as the chicken reaches an internal temperature of 165ºF.

Is it better to cook chicken slowly on high heat or slowly?

anyone! In general, Low is recommended, as the longer and slower the cooking time, the more tender the chicken. But if you’re short on time, high time is fine too.

Tips and Precautions

  • Crisp the chicken. Roasting the chicken for a few minutes at the end is optional, but definitely recommended. It gives a delicious crispy texture to the skin.
  • Make it dairy free. Simply omit the butter or use a dairy-free variety.
  • Add other vegetables. Feel free to add any vegetables you like. Try sweet potatoes, bell peppers, green beans, asparagus, broccoli, you name it.

  • Put butter, garlic, onion, carrots, potatoes, celery and herbs in your container slow cooker. Sprinkle with a little salt and pepper.
  • Pat the chicken dry and sprinkle generously with salt and pepper. Put the vegetables in the slow cooker.

  • In a small bowl, whisk together the sauce ingredients and pour over the chicken.

  • Leave on high for 3 hours, or on low for 7 hours.

  • When done, preheat the broiler to high heat. Transfer the chicken to a baking sheet and grill on high for 1-3 minutes to crisp the skin.

  • Serve chicken with vegetables and extra sauce. Taste and adjust salt and pepper as needed.
