How to Make Crockpot French Onion Soup
This really is the best French onion soup ever. This hearty recipe takes a quick 15 minutes to prepare, then it’s hands-free!
- Cook the onions: Add the butter and oil to the bottom of the slow cooker, then add the onion, coconut sugar, garlic, vinegar, thyme, bay leaf, and half the salt and pepper. Cover and cook on low heat for 6 hours.
- Add broth: Next, add the beef broth, fish sauce, arrowroot powder, and remaining salt and pepper. Cover and cook for another 2 hours.
- bake: You are almost there! Once the soup is done simmering, you can serve it exactly as is. But if you want to serve it more traditionally, divide it into oven-safe bowls and top each with a slice of toast. Sprinkle with cheese, then bake at 350ºF for 20-30 minutes. Broil on high for a final 1 minute to brown the cheese.
- Cool and serve: Just keep in mind that the bowls will be hot when you take them out of the oven. Let them cool for a few minutes before adding them to the soup.

- 1 tablespoon extra virgin olive oil or avocado oil
- 4 white onion, sliced
- 2 red onion, sliced
- 1 tablespoon coconut candy
- 3 garlic cloves, chopped
- 1 teaspoon salt, more to taste
- 1 teaspoon black pepper, more to taste
- 1/4 cup balsamic vinegar
- 2 teaspoons dried thyme or 2 fresh thyme sprigs
- 2 bay leaf
- 7 cups beef soup
- 1/2 teaspoon fish sauce
- 1 tablespoon arrowroot powder
- Optional: red pepper flakes, for serving
- Option: 1/4 cup shredded Gruyere cheese

- put butter and oil on your bottom slow cooker insert.
- Add the chopped onion, coconut sugar, garlic, balsamic vinegar, half of the salt and pepper, thyme and bay leaf. Toss to coat and cook on low for 6 hours.
- After 6 hours, add the beef broth, fish sauce, arrowroot powder and remaining salt and pepper.
- Let continue cooking for the remaining 2 hours. If using fresh thyme, remove the bay leaves and thyme sprigs. Taste and add salt and pepper as needed.
- Heat oven to 350°F.Divide the soup among oven safe bowl. Top each with a slice (or two) of toasted bread, then spread a generous layer of cheese on top of the bread to the rim of the bowl. Bake for 20 to 30 minutes, until the cheese is bubbly. Roast on high for 1 minute.

To make in the Instant Pot:
Press the Saute function on the Instant Pot. Once heated, add the butter and oil to the pan along with the onions. Cook 5 minutes, stirring once. Add the coconut sugar, garlic, balsamic vinegar, salt and pepper, thyme and bay leaf and cook on high pressure for 20 minutes.Use the quick release when you’re done
Press Cancel and remove the cover. If there is a lot of liquid in the bottom of the pan, press sauté and cook until the liquid is almost evaporated and the onions are nicely browned and very sticky.
Add the kudzu and stir until it disappears.A sort ofAdd 4 cups beef broth (this differs from the slow cooker instructions) and fish sauce, cover and seal.
