Babo Khurma, or “sweet bread,” is a dish of wheat flour cooked with sugar into a thick dough. To make dondurma: Boil some milk until it boils over high heat (it should turn into curds). If you want to remove lumps before adding more sugar (or if you think the “clumps” look perfect), add more hot water. If you want something crunchy on top, add some chopped almonds; otherwise leave them out entirely, as they’ll get mushy anyway after prolonged cooking at high heat. Turn off the heat when the mixture starts to boil again; let it cool down completely so that no moisture remains inside, which can spoil further things when reheated later in the preparation stage itself. “

The dish was invented by the poet Robindranath Tagore and is called “he is a dream“(Saber Pone) in Eastern India. The word Sarpuria comes from “chitragupta,” which means diamond-shaped or cut diamond-shaped; thus, this recipe calls for cutting out the diamonds with your fingers before they are baked into edible meals!
