Is spring really here? ! I can’t stand the snow anymore.I am ready to make a spring salad asparagus even start thinking ice cream. Instead, we had another foot of snow on the ground. Today I’m making my easy lazy cabbage roll casserole to comfort me as I try not to obsess over the April winter weather.

Lazy Cabbage Cauliflower Rice Casserole

The Best Cabbage Roll Casserole the Easiest Way

Wondering why I think this is the best cabbage roll casserole ever? Because it doesn’t get any easier. It requires far less prep time than most. The reasons are as follows:

  • No precooked cauliflower. You don’t need to cook cauliflower rice separately. It will be cooked in a casserole.
  • No precooked cabbage. Same goes for cabbage! It will cook with other things.
  • No layering. Some stuffed slaw recipes let you layer beef, cabbage, and rice. You can of course if you want, but I just wanted something quick and easy. Mix everything together. It tastes just as delicious, with no fuss and extra time!

Hey, the reason I call it lazy Cabbage Roll Casserole. If you don’t want to go through the hassle of making actual cabbage rolls, you probably don’t want a complicated casserole either.

How to Make Cabbage Wrap Casserole Low Carb

Cabbage casserole is super easy to make.

The only part you need to do ahead of time is sear the meat. Heat some oil in a wok, add some garlic for about a minute, and use it to brown the ground beef. Season with salt and pepper as you do so.

The entire beef process takes about ten minutes and is the longest part. It can be drained if needed later.

Next, just pour everything else into the baking dish and toss together. Cauliflower rice, cabbage, Italian seasoning, ground beef, and salsa. It all goes into your easy cabbage roll casserole!

Cooking times will vary depending on how large you chop the cabbage and even the type of roasting pan you use. Just check for crisp-tender doneness at 30 minutes or so, then make sure it’s fully done at the end.

You can bake it longer if it is not done. And, if the cheese starts to brown before everything else is done, you can cover it and keep baking to avoid burning the cheese.

What to do with Leftover Cabbage Roll Casserole

This easy cabbage roll casserole recipe makes up a huge portion! You can of course cut it in half and bake it in an 8×8 pan if you want. But if you’re like me, you make more so you have leftovers.

Storing any leftover cabbage casserole is easy. You can keep it in the fridge for a few days.

You can freeze your unfilled cabbage roll casserole if you want to keep it longer. If you do this, make sure to freeze it after baking. The cooking process blocks the enzymes in cauliflower and cabbage, keeping them from spoiling when frozen.

To reheat from the refrigerator, a microwave or a 350-degree oven will do. From the freezer, you can defrost and put in the oven, or warm from frozen. If heating a frozen casserole, you’ll want to cover it so the top doesn’t burn, as it takes a while.
