materials needed
This Crockpot Beef Stew is made with the simplest of ingredients! Here’s what you need:
- olive oil: You’ll need a little olive oil to sear the meat before adding it to the saucepan.
- beef: I recommend chuck or round end for slow cooker beef. You can find stew meat already chopped at the store or chop it yourself.
- vegetable: Our colorful vegetable mix consists of chopped carrots, onions, mushrooms, celery, frozen peas and optional potatoes.
- garlic: I recommend freshly chopped garlic for the best flavor.
- beef soup: The beef broth gives the stew its rich flavor.
- ketchup: A few tablespoons of tomato paste add richness and depth of flavor to the stew.
- flour: I usually use tapioca flour, but feel free to use a flour of your choice.
- Herbs and Seasonings: We are seasoning our Irish stew with a combination of paprika, garlic granules, dried parsley, dried thyme, sea salt, pepper and bay leaves. Don’t forget to remove the bay leaves before serving!

What liquid do you use to stew the beef?
I recommend using beef broth to add a lot of flavor and create a rich beef broth base.
In a pinch, you can swap out the beef stock for chicken or vegetable stock if you have any on hand.
What kind of beef is used in goulash?
The most common cut of beef stew is chuck steak, which tends to be more affordable but is also tougher than other cuts of beef.
Fortunately, its tough texture makes it perfect for beef stew. The long, slow cooking time breaks down the meat perfectly and produces a deliciously tender steak.
Other possible beef cuts include round beef, sirloin or brisket!

How to Make Goulash
This easy beef stew recipe takes 10 minutes to prepare! Once everything is combined, you can walk away and come back to a perfect home-cooked meal!
- Brown Beef: In a skillet, heat oil over medium-high heat, then add beef. Sear until browned on all sides.
- Combine the stew: In a saucepan, combine meat, vegetables, broth, tomato paste, flour, and spices. Mix well.
- chef: Cover and cook on low for 8-10 hours, then serve warm.

How to Thicken Beef Stew
There are a few ways to ensure you have a perfectly thick Irish Beef Stew:
- flour: The tapioca flour in this recipe helps absorb some of the moisture and create a thicker stew texture.
- Potato: The starch in the potatoes naturally helps thicken the stew. Of course, only if you decide to use potatoes. If you are not using potatoes, you may want to add less broth.
- cool down: The stew will naturally thicken as it rests and cools.
If your stew is done in a saucepan, but it’s not as thick as you’d like, you can mash some potatoes or transfer them to a large stockpot and simmer on the stove, uncovered, until to achieve your desired texture.
Can you put raw meat in the slow cooker?
Of course you can, but for this recipe, I recommend searing it first! This is not for food safety purposes, but just for flavor and texture purposes.
Searing the meat first gives the steak a deliciously crispy exterior that adds another layer of rich flavor.
Is it better to cook stews in a slow cooker on low or high?
low! This Irish stew requires longer, shorter and slower cooking times to get the beef tender and juicy.

Tips and Precautions
- Sear the beef. While this isn’t strictly necessary, it does add the perfect extra flavor to the meat.
- Do not use too much liquid. Stews are less “sour” than soups. We don’t want too much liquid or we won’t get that thick texture.
- Don’t skimp on cooking time. Make sure to cook on low for the entire 8-10 hours. The longer and the more tender the beef, the better.
