However, this Sweet Cucumber Salad is probably my favorite version! There is so much to love. For example, this recipe is:

- cucumber: I prefer using English cucumbers for this salad. They have fewer seeds and a thinner skin than other varieties, making them less watery, crispier and easier to eat. However, Persian cucumbers or mini cucumbers will also work.
- Shallots: Finely chopped, adding rich flavor and a satisfying crunch.
- Honey: That's why salads can be sweetened without refined sugar. If you want to make your cucumber salad vegan-friendly, maple syrup will work too.
- White vinegar: Used in dressings to bring extra rich flavor to salads. Feel free to substitute rice wine vinegar, champagne vinegar, or apple cider vinegar.
- water: I like to use it instead of oil to dilute the dressing so it coats the veggies easily without weighing them down.
- Fresh dill: This is the main ingredient in all the best cucumber salads! The bright flavor perfectly balances the rich flavors of the other ingredients. However, you can substitute fresh parsley, basil, or mint if desired.
- Chives: Use the white and green parts to add extra crunch and subtle spice to dishes.
- Cracked black pepper: Add as much or as little as you like!

How to Make the Best Sweet Cucumber Salad
- Add salt to cucumbers: Slice the cucumber with a sharp knife. Place the cucumber slices in a bowl and coat generously with fine sea salt. Then, let them cool in the refrigerator for at least 20 minutes. This removes excess moisture from the cucumber slices and prevents the salad from turning into mush!
- Create dressing: While the cucumbers are cooling, stir together the honey, vinegar and water in a large bowl until smooth.
- Combine: Add cucumber, red onion, dill and scallions to dressing bowl. Stir well and coat, making sure the dressing covers all the cucumbers. If not, add a little more seasoning!
- chill: Transfer the bowl to the refrigerator to chill.
- season: Drain the liquid and transfer the salad to a bowl. Season with black pepper and enjoy!
