How to cook gluten-free chicken nuggets
We provide instructions for frying pan, oven baking and air frying according to your own needs and time.
They take roughly the same production time, but we prefer to fry them. This is obviously more brittle! But they do need more cooking hands.
Air frying them will also result in a crispy appearance, but the oil content is much less, and the number of hands-on cooking is much less.
If you bake them, be sure not to skip the step of using parchment paper and lightly grease the uncooked breaded chicken. Use parchment paper to prevent the chicken from sticking to the pan.
Tips for using gluten-free bread
Over the years, one of the most common complaints we have received when handling paleo and gluten-free chicken bread is that the breadcrumbs fall off. To be honest, in the years we have made them, we really haven’t encountered this situation. I think the reason is that we treat them carefully while breading them and cooking them.
The biggest tip we can provide for frying is to make sure to use enough oil and not to flip the chicken until it is ready. This technique is not only applicable to this chicken nugget recipe, but generally speaking, if a piece of meat is not fully cooked when you try to flip it, it may stick! So just test one and make sure it easily falls off the pot before flipping. If you find it stuck, let it cook longer before you try to flip it.
In addition, we found that using a thin spatula is best for turning these instead of a pair of pliers, so there is less chance of damaging the coating.
One more tip, if you are baking, don’t skip the parchment paper! It is important to ensure that these do not stick to the baking sheet. Make sure to put a little oil on the paper and breadcrumbs (we found that spraying works best here) to make sure there is no sticking.

Can I freeze these?
Absolutely! When you need to quickly eat something for your child (or yourself), you can make a large batch of these and keep them in the refrigerator!
My biggest suggestion is to freeze them on a parchment-lined paper plate for about 24 hours first. Then transfer to a bag for easy storage. This ensures that they will not all stick together.
You can defrost them overnight and reheat them in a toaster or oven, or you can reheat them directly from the frozen state. I recommend 350ºF until they get hot. I guess you can also reheat it in the microwave, but I have never tried it!

- 1——½ Pound chicken breast, cut into bite-sized pieces (about 1-½”-2” pieces)
- Salt and black pepper
- 2 Egg
- 1 tbsp water
- 1——½ Cup almond flour
- 1 teaspoon Garlic powder
- 1 teaspoon Italian seasoning
- 1 teaspoon chili
- 1 teaspoon Salt
- ½ teaspoon Chili powder
- ¼ teaspoon Cayenne (optional)

- Pat the chicken dry and season with salt and pepper.
- In a shallow container, stir the eggs with a pinch of salt and pepper
- In a separate shallow container, stir together almond powder, garlic powder, Italian seasoning, chili powder, salt, chili powder, and chili powder.
- Dip the chicken slices into the egg, then pour into the flour mixture, be sure to spread evenly. Repeat until all the chicken is coated. Make sure to handle the chicken carefully so as not to damage the coating.
fry:
- Heat oil in a large frying pan over medium heat. Once it’s hot, cook the chicken in batches in a pan, 3-4 minutes per side, depending on how thick your chicken is. Cook until the chicken is crispy and golden brown and cooked. Put on a towel to soak up the excess oil.
- Eat immediately or chill to prepare a meal.
Air frying:
- Preheat the air fryers to 400ºF (not all air fryers need to be preheated if necessary).
- Lightly spray the air fryer basket with avocado spray (or a similar spray without additives) and place the prepared chicken on one layer, leaving a space between each slice. If your air fryer is small, you may need to do it in batches. Lightly spray the chicken with additional avocado spray.
- Air fry for 12-14 minutes, rotating the chicken at the 5 and 10 minute marks.The skin is golden and crisp, and the internal temperature of the meat is 165 degrees
- Eat immediately, or chill to prepare a meal.
bake:
- Preheat the oven to 400 degrees. Line the rimmed baking sheet with parchment paper.
- Lightly spray or brush the paper tray with oil. Place the chicken on the roasting pan and lightly spray or brush with oil.
- Bake in a preheated oven for 10 minutes. Turn the chicken over and bake for another 5-7 minutes, or until the chicken is cooked through and the coating is crispy.
- Eat immediately or chill to prepare a meal.
