Full-fat unsweetened yogurt makes it rich and creamy, but still light and healthy compared to the usual sour cream. It’s also infused with Indian-style madras curry powder and anti-inflammatory turmeric. Curried Cauliflower Casserole (Gluten Free)

- 4 cup small cauliflower florets from 1 medium head cauliflower
- 6 ounce Full Fat Plain Greek Yogurt
- 1/4 cup chopped chives plus more decorations
- 1/4 cup roughly chopped cashews
- 2 tablespoon golden or regular raisins
- 1 tablespoon Madras Curry Powder
- 1 teaspoon turmeric powder
- 1 teaspoon Salt
- 1/4 cup vegetable or chicken stock
- 1/3 cup fresh gluten-free breadcrumbs

Preheat oven to 400°F and grease a shallow 9 x 13-inch baking dish or casserole dish.

In a large bowl, combine cauliflower, yogurt, chives, raisins, cashews, curry powder, turmeric, and salt. Transfer mixture to prepared dish and spread in an even layer. Pour in stock and cover with foil.

Roast cauliflower casserole for 20 minutes, until florets are semi-soft. Remove the foil, sprinkle with bread crumbs (you can also add a little olive oil), and return to the oven. Bake uncovered for about 15 minutes, or until the liquid has evaporated, the topping is crusty, and the cauliflower is fork tender but not falling apart.
