Ingredients and Substitutes
This section explains how to choose the best homemade Greek dressing ingredients, what each ingredient does in the recipe, and substitution options.For measurements, see recipe card below.
- olive oil – Extra virgin olive oil is the base of traditional homemade Greek dressing, but you can also use regular olive oil Or avocado oil.
- red wine vinegar – Adds tangy flavor and emulsifies oils. White wine vinegar would be the closest substitute if you need it. Apple cider vinegar or balsamic vinegar will also work, but the flavor will vary.
- lemon juice – Same purpose as vinegar, but with a different flavor. (You can use just vinegar or lemon juice if you prefer.) Fresh lemon juice tastes best, but bottled lemon juice Works great.
- dijon mustard – Add flavor. Whole grain mustard also works well.
- dried oregano – You can also try dried marjoram, thyme or basil.A Greek seasoning mix is a great substitute if you have it, or you can even use italian seasoning, which is very similar to Greek.You may choose to use fresh herbs (triple the amount) for your Greek Salad Dressing Instead, but it won’t last that long.
- garlic powder – I prefer powder here so it’s not overpowering, but you can use 1 1/2 tsp minced fresh garlic for a more intense flavor.
- sea salt and black pepper

How to Make Greek Salad Dressing
Making Greek Vinaigrette takes just minutes! Simply whisk all ingredients in a small bowl until emulsified. Serve immediately, or store for later.
Rule of thumb: Use 1 tablespoon of Greek salad dressing for every 1-1.5 cups of salad.
If your salad has greens, one salad will be 2 cups, so 1 1/2 to 2 tablespoons of dressing will go with it. For salads with no greens, the serving size will be smaller (usually around 1 cup), so 2 teaspoons to 1 tablespoon of dressing is enough for one serving.

Keep this easy Greek salad dressing recipe in a jar in the pantry for a few days, or in the refrigerator for up to 1 month.
Like any vinaigrette, it may separate or even solidify after a while in the refrigerator. Just let it come to room temperature and shake or stir again to combine.
