This baked apple and chicken recipe uses a delicious honey-Dijon sauce to enhance the sweetness of the fruit. This is an easy gluten-free chicken thigh dinner, or you can double it up for a big holiday gathering (it's also dairy-free and kosher for Rosh Hashanah!).
My husband and I often argue when planning a trip. I prefer Airbnb or a rental with a kitchen. He loved the creature comforts of the hotel. We usually compromise, as we did when we traveled to Normandy a few years ago. How to Make Roasted Honey Mustard Chicken with Apples
Because this Grilled Honey Mustard Chicken Recipe was inspired by my trip to francewhich uses shallots and leeks. Green onions are essential to counteracting the effects of apples in this sweet and savory dinner. If you're not familiar with leeks (and don't want to be!), a small slice of onion will work too, or you can omit them. Likewise, white wine is an easy substitute for apple brandy.
The key to any slightly fancier version of honey mustard sauce is to use Dijon good qualitywhich adds a sinus-opening peppery flavor to cut through the sweetness. If you want to make it easier, you can easily use store-bought honey mustard. But I have yet to find a sauce that I like as much as the Honey Dijon Sauce I make at home. Plus, making your own allows you to keep the amount of honey in moderation and let the apples do some of the heavy lifting in the sweetening department.

Grilled Honey Mustard Chicken and Apples

- 1/4 cup Dijon mustard
- 1/4 cup apple cider vinegar
- 2 teaspoon Honey
- olive oil

In a large bowl, combine mustard, vinegar, honey, 2 tablespoons olive oil, and 1 teaspoon sea salt. Add chicken and stir in marinade. Transfer to the refrigerator and let sit overnight (or at least 1 hour).

Preheat oven to 375 degrees Fahrenheit.

Scatter the shallots, apples, and leeks into the bottom of a large (9×13) casserole or baking dish. Season casserole contents lightly with salt and drizzle with olive oil. Remove the chicken legs from the marinade and place on top of the apples, pulling some of the apples and shallots to the surface so they protrude from the gaps between the chicken.

Add apple cider or juice, chicken broth, brandy or wine, and crème fraîche or a dairy-free alternative (if using) to the marinade. Stir until everything is well combined. Pour sauce around chicken and apples.

Bake chicken and apples for 45 minutes to 1 hour, or until chicken skin is lightly browned, apples are caramelized, and sauce is bubbling.

Serve the apples and chicken directly from the pan or place on a plate with juices in the sauce pan next to it. The entire recipe can be made up to 2 days ahead and reheated in a casserole before serving.
