- chicken breast – I use boneless and skinless chicken breasts, but you can also use chicken thighs if you like.
- Bell pepper – I like to use various colors, but use your favorite.
- zucchini – Feel free to replace it with similar vegetables, such as yellow squash or even eggplant.
- Shallots – If you want, you can also use white onions or yellow onions.
Chicken barbecue marinade:
- olive oil – Use extra virgin olive oil for the best flavor. If needed, you can still use regular olive oil or switch to avocado oil.
- Lemon juice – Freshly squeezed best, lemon is a must-have for Mediterranean grilled chicken!
- garlic – Fresh minced garlic tastes best, but minced garlic in a jar is fine.
- Fresh herbs – I used dill and parsley, which is perfect for summer! I highly recommend fresh, but if you must use dried herbs instead, use a teaspoon of dried herbs instead of every tablespoon of fresh herbs.

How to grill chicken skewers

- Prepare chicken and vegetables. Cut all the meat into 1.5-inch pieces. For zucchini, cut it into rounds.

- Mix the chicken barbecue marinade. Stir together olive oil, lemon juice, garlic, dill, parsley, sea salt, and black pepper.
