- peach – Ripe peaches are a must for this recipe. Look for firm fruit with brightly colored peel and flesh, applying light to gentle pressure near the stem. Either yellow or white peaches will work! Cut them into wedges.
- arugula -While other leafy greens, like baby spinach or spring mix, work too, the spiciness of the arugula perfectly balances the sweetness of the peaches. Baby arugula also works.

- Baked. Preheat the grill or bakeware and brush with oil. Place the peaches on the grill, cut side down, in a single layer. Grill, flipping once, until tender with light grill marks.

If they move too much, they won’t create any grill marks.
