What is a Hasselback Chicken?
Hasselback Chicken Breasts are a fun way to stuff chicken! It involves deep slices of chicken and stuffing stuffed between the slices.
This cooking method originated with hassselback potatoes at the Hasselbacken restaurant in Stockholm, Sweden, but it works for a variety of other foods, including chicken.

Ingredients and Substitutes

- chicken breast – I find that boneless skinless chicken breasts work best for hasselbacking, but you could also try boneless skinless chicken thighs.
- sea salt and black pepper – Season the chicken.
- cream cheese – Full fat or light will do. Let it sit on the counter for about 30 minutes to soften.
- cheddar cheese – I use cheddar cheese because I think it’s best for melting, but you can also use mozzarella, Colby Jack, or your favorite melting cheese.
- bacon – My favorite way to cook bacon for this hassselback chicken recipe is bacon in the oven or Air Fryer Bacon! But you can also use the stove top if you prefer. Just make sure it’s cooked or it’ll be runny if you start with raw.
- chili – Use fresh and slice thinly. The seeds are the spiciest part, so leave them in if you like heat, or remove them if you want a milder result. If jalapenos are not your thing, you can dice bell peppers and use them instead.
- fresh chives -Chives are optional, but I think they add a fresh flavor to the cream cheese.

How to Make Hasselback Chicken

- Prepare. Preheat oven.Arrange chicken breasts in a single layer on stoneware bakeware.
- season. Season the chicken with salt and pepper on both sides.
- piece. Using a sharp knife, cut 6 short slits in the top of each chicken breast. Cut most of it, but not all the way to the bottom.
- Stuffed with cheese. In a medium or small bowl, mash cream cheese and cheddar cheese. Stuff the cheese mixture into the crevices.


- Add bacon and jalapenos. Cut bacon into 3 sections, one each. Tuck bacon slices into each slit, 6 small pieces per chicken breast. Stuff jalapeno slices into each slit, 6 slices per chicken breast.
Tip: Increase heat if desired.
As written, the chicken was very mild with 1 jalapeño per piece of chicken. Even my young kids ate it. If you like more heat, you can use 2 or 3 jalapenos instead of one and put more jalapenos between each slice before roasting.
- bake. Cook the Hasu chicken in the oven until the internal temperature of the chicken reaches at least 163 degrees Fahrenheit. (For best results, use the meat thermometer Insert into the thickest part of the chicken, not the stuffed area. ) you can cook to 165F to be on the safe side, but I prefer to take it out early and let it get to 165F while it rests.
- rest. Remove from the oven and let the jalapeño chicken rest for 5 minutes before serving. (This allows the internal temperature to rise to full cooking and also ensures that the chicken remains juicy.)
- decorate. Sprinkle with a little fresh chives before serving, if desired.


Hasselback Chicken Recipe Variations
Instead of jalapeno chicken stuffing, try making Hasselbeck chicken with a different filling:
- Hasselback Chicken with Cabbage – Slice the tomatoes and mozzarella into thin slices, slightly wider than the width of the chicken breast. Stuff one slice of mozzarella cheese, one sliced tomato, and one whole basil leaf into each crevice of the chicken. Drizzle with olive oil and balsamic vinegar before baking.
- Creamed Spinach – make the filling like mine Spinach Stuffed Chicken Recipeand stuff it into the gap.
- Cheesy Asparagus – Stuff provolone or mozzarella cheese into the crevices. Cut the tiny asparagus into 6 pieces and place a piece in each chicken slit.Alternatively, view my Asparagus Stuffed Chicken Recipe.
- Hasselback Chicken Cordon Bleu – Fill the gaps with sliced ham, Swiss cheese and a dash of Dijon mustard.
- Ranch Hasuk Chicken – Add to ranch seasoning Add to cream cheese mixture for a bacon, ranch and cheese filling.
storage instructions
- shop: Store leftover chicken in an airtight container and refrigerate for 3-4 days.
- Meal Prep: You can prepare this Chicken Hasselbeck recipe ahead of time. Assemble them ahead of time and store in the refrigerator for up to 2-3 days, then bake before serving.
- Reheat: Reheat in oven or microwave at 350 degrees Fahrenheit.
- freeze: You can freeze Jalapeno Popper Chicken for up to 3 months, either before or after baking. Thaw overnight in the refrigerator before baking or reheating as usual. As with other hassselback chicken recipes, it will depend on the filling and whether it freezes well.

Preheat oven to 400°F (204°C).

Arrange chicken breasts in a single layer on Stoneware. Season both sides with salt and pepper.

Cut 6 short slits in the top of each chicken breast, about 1/2 inch (1.27 cm) apart, cutting the way down about 3/4 of the way, but not all the way to the bottom.

In a medium bowl, mash the cream cheese and shredded cheddar. Stuff the cheese mixture into the crevices.

Stack the cooked bacon slices and cut each slice into three pieces, about the width of the chicken breast. (If you don’t have cooked, you can cook bacon in the oven like this While you are prepping the chicken. ) Tuck bacon slices into each slit, 6 small pieces per chicken breast.

Stuff jalapeno slices into each slit, 6 slices per chicken breast.

bake approx. 25 minutes, or until the internal temperature reaches at least 163°F (71°C). (Note: Baking times will vary based on the size of your baking dish. Chicken pieces will finish faster if they are not touching each other.)

Remove from oven and let chicken rest 5 minutes before serving. The internal temperature will continue to rise a few degrees—use a meat thermometer to make sure it reaches 165°F (74°C) before serving.

Sprinkle with fresh chives before serving, if desired.
