- milk – Use room temperature milk. Milk of any kind (milk, almond milkcoconut milk, hemp milketc.) will work.
- dried cranberries – To make this oatmeal bake even healthier, use Unsweetened Dried Cranberries. However, these are completely optional.
- walnut – optional, but I like the flavor of chopped pecans in my oatmeal. You can also use walnuts, hazelnuts or macadamia nuts. For a nut-free option, omit or substitute sunflower seeds or pepitas entirely.

- Prepare. Preheat oven.grease 9×9 baking dish Use oil, butter or cooking spray.
- Stir in dry ingredients. In a large bowl, whisk together rolled oats, baking powder, cinnamon, and salt.
- Stir in wet ingredients. In a medium sized bowl, brush Beat together eggs, cookie butter, melted butter, and vanilla until smooth. Stir in milk.
