Easy Gluten-Free Carrot Cake Recipe

This healthy carrot cake loaf is a new favorite carrot cake recipe. Made with a gluten-free and paleo-friendly blend of almond and coconut flour, it’s extra moist and naturally sweet, infused with honey and applesauce, and topped with a simple and sweet maple glaze.

This delicious and healthy carrot cake recipe is loaded with carrots and optional additions like raisins, nuts or chocolate. This is a dessert everyone will love!

Is Carrot Cake Healthier Than Chocolate Cake?

This carrot cake is definitely more for you than regular chocolate cake. Not only does it contain nutrient-dense carrots, but it’s also naturally sweet, gluten-free and paleo-friendly. Nothing unhealthy here!

  • Egg: Glue everything together so the bread can hold its shape.
  • Applesauce: Unsweetened applesauce is a great way to add moisture and a bit of natural sweetness to bread.
  • Honey: Our selection of other natural sweeteners.
  • Oil: Use avocado oil or melted coconut oil to add moisture to the bread. Avocado oil will have a more neutral flavor, while coconut oil will have a subtle coconut flavor.
  • Vanilla extract: Adds depth and warmth to flavor.
  • flour: We use a mix of almond flour and coconut flour to give the bread structure and make it gluten-free.
  • Baking Powder and Baking Soda: We use these two starters to ensure we get a light and fluffy texture.
  • Ground cinnamon: Adds a touch of sweetness.
  • Salt: A pinch of fine sea salt cuts the sweetness and enhances the flavor of the bread.
  • radish: You’ll need about 2 medium sized carrots, grated so they work well into the batter.
  • Optional glaze: If you want, you can make an easy glaze with organic powdered sugar, maple syrup, almond milk, and optional maple extract for a little maple flavor.

How to Make Healthy Carrot Cake

This delicious carrot cake loaf is ready in just 10 minutes!

  1. Make the batter: In a bowl, whisk together eggs, applesauce, honey, oil, and vanilla. Add flour, baking powder and soda, cinnamon and salt. Stir until combined, then add carrots and other additions (if using).
  2. Bake and cool: Pour the batter into a parchment-lined loaf pan, smooth the top, and bake until a toothpick comes out clean. Let cool completely.
  3. Add glaze: In a bowl, whisk together all glaze ingredients. Drizzle over cooled bread and slice to serve.

Is butter or oil better for carrot cake?

While it depends on the recipe, I definitely recommend using oil in this recipe. It makes gluten-free carrot cake moister than butter, so the texture is tender and delicious!

How do you keep gluten free cake moist?

We’re doing a few things to make sure our gluten free carrot cake stays delicious and moist!

  1. To add moisture to the batter: We use applesauce and oil to add a lot of moisture to the batter. Carrots are great for hydration too!
  2. Appropriate amount for baking: Once the toothpick comes out clean, remove the bread from the oven. Overbaking will cause it to dry out very quickly.
  3. Store in an airtight container: If you have leftovers, be sure to store them in an airtight ziplock bag or container at room temperature. This preserves the moist texture best.

Tips and Precautions

  • Line loaf pans. I recommend lining loaf pans with parchment paper slings. This makes it super easy to remove the loaves when they are done baking.
  • Do not swap flour. I do not recommend substituting any flour for almond flour and coconut flour. This recipe is designed for those specific flours and the moisture they absorb. Others will not be the same.
  • Check for doneness. After 45 minutes, insert a toothpick into the center of the loaf. If the result is clean, then it’s ready to use.
  • Let cool before glazing. Make sure the carrot cake is completely cool before adding any glaze. If it’s too hot, it will runny and melt.

how to store

Leftover healthy carrot cake will keep at room temperature in an airtight container or ziplock bag for 2-3 days. I don’t recommend storing it in the fridge as it dries out more easily.

For longer storage, you can wrap the bread tightly and store in the refrigerator (unglazed) for 2-3 months. When you’re ready to serve, just thaw at room temperature!

  • 3 Egg
  • 1/3 cup unsweetened applesauce
  • ¼ cup cup of honey
  • 2 tablespoon avocado oil or coconut oil melted
  • 1 teaspoon vanilla extract
  • 2 cup 200g almond flour
  • 2 tablespoon 15g coconut flour
  • 1-½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon

  • ½ cup organic powdered sugar
  • 1 tablespoon Maple sugar
  • 1-2 tablespoon almond milk
  • ½ teaspoon maple extract Elective
  • Preheat oven to 350ºF and place an 8″x5″ loaf pan with parchment sling.
  • In a large bowl, whisk together eggs, applesauce, honey, oil, and vanilla until combined. Add almond flour, coconut flour, baking powder, baking soda, cinnamon, and salt and beat until fully combined.

  • Fold in carrots and any optional add-ins.

  • Pour the batter into the prepared loaf pan and smooth the top.

  • Bake in the preheated oven for 45-50 minutes, until a toothpick inserted in the center comes out clean.

  • Let the bread cool completely.

  • Make the optional glaze: Stir all ingredients together. If the glaze is too thick, you can add more almond milk one tablespoon at a time until the desired consistency is reached.
