Ingredients and Substitutions

Choose Lamb Chops:
Lamb chop recipes can be made with lamb ribs, lamb loin chops or lamb shoulder chops, which are three completely different cuts of lamb:
- Ribs Take from the ribs (called lamb chops when whole) and cut them into individual chops. This is the most representative cut of lamb chops, the most tender, and the most expensive.
- loin steak It is cut from the lamb loin without any bones. They’re still tender, but not as tender as prime rib, and they’re less expensive.
- shoulder blade Comes from the shoulder of lamb, also boneless. This cut is more difficult than the others, but is also the cheapest. Best cooked over low heat.
This grilled lamb chops recipe uses lamb chops. You can buy pre-cut lamb (I recommend buying it at your butcher for the best quality), or carve a rack of lamb yourself. You can also use kidney chops instead, but the cooking time will be different and you may need more marinade. I would cook the shoulder steaks differently, but you can use the same marinade.
Lamb chop marinade:
A simple marinade gives amazing flavor in this oven lamb chops recipe, which is made with basic ingredients:
- olive oil – Extra virgin olive oil or avocado oil will work here.
- lemon juice – Adds bright and tangy flavor, but more importantly, the acid tenderizes the meat. If possible, use fresh juice. You can also use lime juice or vinegar to achieve a similar acidity.
- garlic – I used crushed garlic because it mixes more evenly, but you can use 3 tsp instead canned minced garlic (or fresh minced garlic) for convenience.
- herbal medicine – This lamb chop recipe combines fresh rosemary, fresh thyme and dried oregano. You can substitute dried herbs for fresh herbs or vice versa. Replace each tablespoon of fresh herbs with one teaspoon of dried herbs, or vice versa. Feel free to add other herbs such as mint, basil, parsley or marjoram.

How to cook lamb chops in the oven

- Mix lamb chop marinade. Stir the olive oil with the lemon juice, crushed garlic, rosemary, thyme, oregano, salt, and pepper.
- Marinate the lamb. Add the ribs and turn. Cover with plastic wrap and marinate. (See tips below.)

- rest. Remove the lamb chops from the pan when done, otherwise they will be overcooked. Wrap the ribs in foil and let rest before serving. Repeat with remaining lamb chops.


How long do you bake lamb chops in the oven?
After searing both sides on the stovetop, bake the lamb chops at 375 degrees F for about 2-5 minutes for medium-rare to medium-rare, or about 5-8 minutes for medium-rare to well-done.

Although you’re only grilling these ribs for a few minutes, it’s best to judge by the internal temperature of the lamb chops rather than the time. Use the chart below as a guide:

*Temperature is the temperature before rest. International temperatures will rise another 5-10 degrees during the break.

Tips for the Best Grilled Lamb Chops
While the steps are pretty simple, here are some tips for the best lamb chops recipe:
- Marinate for appropriate time. Minimum time is 30-60 minutes and you can do it on the counter. If you have time, marinating for up to 24 hours will produce a juicier result, but you’ll want to let the lamb come to room temperature for 30 minutes before cooking. Do not marinate for more than 24 hours or the meat will become mushy.
- Fry in batches. If making more than four lamb chops, fry them in batches so they are not crowded in the pan.

- Cook until medium rare or less. It is not recommended to cook the lamb chops above medium as it will make it fishier.
- Serving size depends on the size of the ribs. One large lamb chop is enough for one person, and if the lamb chops are smaller, two or three per person would be even better. It also depends on whether you prune them or not.
- Thaw if frozen. You can cook with frozen lamb chops, but the grilled lamb chops may cook unevenly. If your items are frozen, thaw them in the refrigerator overnight or place them in a sealed Ziploc bag submerged in cold water on the counter.
Storage instructions
- Shop: Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
- Meal Preparation: Make the marinade ahead of time and marinate the ribs for up to 24 hours.
- freeze: Store raw lamb chops in a ziplock bag in the refrigerator for up to 6 months. It’s possible to freeze cooked lamb chops, but they often become dry or overcooked after thawing and reheating.
- Reheat: To reheat while keeping the pink center intact, I follow the Reverse grill steak: Preheat the oven to 250 or 300 degrees Fahrenheit, place them in a baking dish with a little broth to steam, cover with foil, and bake the lamb chops in the oven for 10-15 minutes.

What to serve with lamb chops

In a large bowl, stir together 3 tablespoons of the olive oil with the remaining lamb chop marinade ingredients (lemon juice, minced garlic, rosemary, thyme, oregano, salt, and pepper). Add lamb chops. Turn them over to coat with the marinade and press the marinade into the ribs.Cover with plastic wrap and marinate at room temperature 30-60 minutes. (Alternatively, marinate in the refrigerator for a few hours or overnight, but let the lamb chops sit at room temperature for 30 minutes before cooking.)

Preheat oven to 375 degrees F (190 degrees C).

Heat a tablespoon of olive oil in a pan Large cast iron griddle or Large cast iron skillet Heat over medium-high heat for approx. 2 minutes, until screaming hot and sparkling. Immediately transfer skillet to preheated oven.Grilled lamb chops take approx. 2-5 minutes medium rare to medium rare, or about 5-8 minutes Moderate to good. (However, it is not recommended to cook it over medium heat as it may have a fishy smell.)

Remove the lamb chops from the oven and transfer to a plate (do not let them sit in the pan or they will overcook).

Repeat searing and oven combination with remaining lamb chops. (It’s a good idea to wipe the pot clean between batches.)

Foil tent and rest 5 minutes per serving. (The temperature will rise an additional 5-10 degrees.)
