How to cook spinach mashed potatoes


The first recipe my mother taught me was how to cook spinach with potatoes.

This spinach mashed potato recipe was a staple of my childhood, although it might make me look like a teenager with ten heads, but strangely, I always prefer this version, mixed with vegetables in an overweight pile of dairy products .

It was not until later years that I realized that her spinach and potato dishes must have evolved from Irish Colcannon, which combines mashed potatoes with cooked vegetables or cabbage. Although I just toss them with potatoes in the last 30 seconds of boiling, instead of sautéing vegetables, this makes it super streamlined and easy.

Instead of adding cream or butter, I used vegetable broth and olive oil or nut ghee, a clarified butter without lactose. If you choose the former, this recipe can be completely dairy-free and vegetarian. If seasoned properly, it still retains some richness. And no matter which you choose, it is also low FODMAP.

Spinach Mashed Potatoes

  1. Place the potatoes in a large pot and cover 1 inch with cold water. Bring to a boil and cook until the potatoes are fork tender, about 15 minutes. Fold the spinach and cook for another minute. Drain the potato mixture and put it back into the pot with ¼ cup of stock, 1 teaspoon of salt and oil. Use a fork or masher to mash the potatoes until they are semi-smooth. If the potatoes look too thick and dry, add more liquid. Stir in the butter and taste the seasoning.
