And I’ve figured out how to grill pork chops to absolute perfection! For this grilled pork chop recipe, all you need is the pork chop you’re cooking, oil, simple dry brine, and a grill.

How to Cook Pork Chops on the Grill
Grilled pork chops really couldn’t be easier! They cook quickly in just a few easy steps!
- Seasoning and Pickling: Dry the pork chops, then rub them with oil and seasonings. Marinate at room temperature for at least 30 minutes, or more ideally, overnight in the refrigerator.

Bone in and Boneless Pork Chops

If you don’t want to use bone-in pork, feel free to use boneless pork chops. Just make sure you check the pork ahead of time with a meat thermometer to make sure you don’t overcook it!
How long does it take to grill pork chops
Grilled pork chops are amazing because it’s so quick! However, the time to grill the pork chops will vary depending on the thickness and whether you are using bone-in or boneless.
I prefer to use 1.5 inch thick bone-in pork chops. I cooked them on medium-high heat for 9-12 minutes, flipping halfway through.
The key is Check out the pork early! You can always cook more, but once you overcook it, there is no going back.

What is the correct cooking temperature for pork chops?
We recommend following USDA guidelines and cooking these pork chops to 145ºF, and then let them rest. While they are resting, their temperature will continue to climb slightly. Use an instant-read thermometer to check the internal temperature of the thickest part of the meat.
Now, over the years, the USDA has changed the recommended cooking temperature for pork. Not long ago, it was suggested that pork be treated like chicken and cooked to 165ºF to kill any potentially harmful bacteria. However, bacteria were found to be killed at 140ºF, so the recommended cooking temperature was reduced to 145ºF and rested for 3 minutes.
I do not recommend cooking above 145ºF. Overcooked pork was dry and tough!
How do you grill pork chops without drying them out?
Pork chops are lean meat, which means they dry out faster. However, there are things you can do to prevent this from happening!

- Use bone-in pork. Bone-in pork is juicier than boneless pork.

- Add pork when hot and cook 7 minutes per side, or until internal temperature reaches 145ºF and fully cooked. Remove pork chops from grill, cover lightly with foil, and let rest for 5-10 minutes.
- Serve the pork chops with cilantro and a side dish of choice!
