This oven-roasted eggplant recipe is the perfect healthy addition to just about any meal. I keep the basic seasonings in these grilled eggplant slices so they can be used in a variety of ways. Turn them into eggplant parmesan with marinara and mozzarella. Or use them in place of pasta as a lasagna layer (Eggplant Lasagna! ). Or just put them next to the chicken! You really can’t go wrong. I’ll show you how to cut an eggplant and how to roast it – everything you need to know about roasting an eggplant can be found below.

Eggplant is one of those vegetables that people often have strong opinions about. I understand. I’m not always a big fan of eggplant. But when you drizzle the slices with a generous drizzle of olive oil and season them properly, they caramelize in the oven and are irresistible!

How to Roast Eggplant

I’m here to show you how to roast eggplant! As I already mentioned, it’s fast, simple and versatile.

Everyone should have a basic grilled eggplant recipe in their back pocket, and that’s it.

  • slice the eggplant. I like to slice them into 1/2 inch (or so) slices.

Tip: The thinner the slices, the more caramelized edges and the shorter the baking time. However, if you slice them thin, you run the risk of burning also Thin, so 1/2 inch thick (or slightly thinner) is a good target thickness.

  • Put the eggplants on the baking sheet (or two if you don’t have room). Once the slices are laid out in a single layer, drizzle with olive oil and season with sea salt, garlic powder, and black pepper. Flip slices and repeat for oil and seasoning.

Do not! You don’t have to peel the eggplant before cooking it. The skin of the eggplant (nice purple!) is completely edible and actually helps the eggplant hold together after cooking.

If you’re going to turn your grilled eggplant slices into a baba ganush-like dip, you can remove the peel, but for general grilled eggplant recipes, you’ll leave the peel on.

How to Cut Eggplant

When you cut the eggplant, you want to cut it crosswise into rounds, about 1/2 inch thick. Try to slice them evenly so they cook evenly.

I do have a specific tip on how to cut eggplants:

Cut off the leafy ends only after you’ve finished slicing so you have more to grab while slicing.

How to Season Eggplant

In this oven-roasted eggplant recipe, we keep the seasonings very basic. This is great because eggplant can be used in many different ways.

I like to drizzle eggplants with healthy olive oil and season with salt, garlic powder and black pepper.

Tip: Want more flavor without breaking a sweat? sprinkle some Italian seasoning!

Cooking time for grilled eggplant slices is approx. 400 degrees Fahrenheit for 30 minutes. You want them golden and soft.

If your slices are much larger or smaller than 1/2 inch, the cooking time may vary, as I recommend here.

How to Store Grilled Eggplant Slices

You can store roasted eggplant slices in the refrigerator for 3-5 days. Let them cool after baking, then layer them into an airtight container.

How to Freeze Oven Roasted Eggplant

This oven-roasted eggplant recipe freezes well! After the eggplants are cooked, let them cool. You can then freeze them in a single layer on cookie sheet. When they are frozen solid, you can transfer the slices to a freezer bag.

When you’re ready to use the grilled eggplant slices, let them thaw and reheat in a skillet or 350°F oven until warm.
