The original recipe for egg bites is cooked using sous-vide, a method that involves cooking airtight pouches of food at low temperatures in a water bath for an extended period of time. But since it requires special equipment, I chose to use my Instant Pot to make these! (If you don’t have an Instant Pot, you can do Sausage Egg Muffins either any smell Egg Muffins in muffin tins instead. )

taste change

My favorite flavor in egg bites recipes is Bacon Gruyère, which is what I make! But you can easily customize these knockoff Starbucks egg bites to your liking. Here are some ideas for add-ons:

  • vegetable – Try adding broccoli, mushrooms, cauliflower, bell peppers or other vegetables low carb vegetables (or any kind). You need to cook them first. The easiest way is to cook on high pressure in the Instant Pot for 1 minute (too fast!). Chop what you need and save the rest for another use. You’ll want to stir the veggies into the egg mixture after mixing (or just drop them into the molds before adding the egg mixture), but avoid actually mixing them.
  • Sausage and Cheddar – You can substitute cooked sausage and cheddar for the bacon and Gruyere. Just swap the ingredients and follow the steps above.
  • Egg Whites and Roasted Red Peppers – Replaced the whole egg in the original recipe with 7 egg whites. Replace the Gruyere with 1/2 cup of cottage cheese and 1/4 cup of cream cheese. Replace bacon with 1/4 cup spinach, 2 tablespoons roasted red peppers (drained and chopped), 1/8 teaspoon sea salt, 1/8 teaspoon black pepper, and 2 scallions.
  • Spinach and Feta Egg Bites – Use baby spinach and feta instead of bacon and Gruyere.
