What is Italian Seasoning?
Italian seasoning is a mixture of dried herbs used to season Italian dishes. It often includes oregano, basil, thyme, marjoram, rosemary, and sage for an aromatic and flavorful mix.
Italian seasoning has some similarities to Greek seasoning and herbs from Provence. Unlike Greek seasoning, which mixes herbs and spices, Italian seasoning contains only dried herbs. Herbs de Provence are very similar but with the addition of dried lavender.

What is Italian Seasoning?

- dried oregano – This is the key ingredient in this seasoning. It adds a warm, earthy flavor that is essential to classic Italian dishes.
- dried marjoram – Similar to oregano, but less pungent.
- dried basil – Added slightly sweet and slightly spicy flavors.
- dried thyme – This herb actually belongs to the mint family, but it does not taste minty. It helps add complex flavors to dishes and brings out the flavors of spices.
- dried rosemary – An aromatic evergreen herb. These are longer than the other dried herbs in this mix, but you can chop them up with a knife if you don’t want large chunks.
- dried sage – Sage, rosemary’s “sister” plant, adds a comforting flavor to savory dishes.
If you don’t have one of these herbs on hand, you can substitute an equal amount of one of the others. You can also add some dried parsley if you like.

Stir the Italian seasoning in a small bowl and place in an airtight container or small glass jar。 You can also pour the ingredients directly into the jar and shake well.
If you prefer a powdery texture, use a coffee grinder, spice grinder, food processor, blender, or mortar and pestle to grind the spices. (I usually don’t.)
