- carrot strips – You can grate them fresh or use pre-ground varieties.
- minced ginger – Brings a burst of spice and sweetness.I recommend fresh ginger for the best ginger paste, but you can also use 3/4 tsp ginger powder instead.
- avocado oil – a less processed neutral oil than soybean or canola oil in restaurant sesame ginger sauce recipes. You can also use olive oil.
- onion – You can also use chopped red onion.
- garlic – Use fresh for best flavor, or get canned minced garlic To save time.
- white miso paste – Suppresses the pungent taste of fresh ginger. If you can’t find miso paste, you can use 1 tablespoon coconut aminos (or soy sauce) instead.
- rice wine vinegar – Rice vinegar has a mild taste and adds just the right amount of tartness to this Asian ginger salad dressing. Apple cider vinegar is the closest substitute if necessary.
- sugar – I used this unsweetened honeyBut regular honey will work too.
- lime juice – Balances the sweetness of carrots and honey.
- sesame oil – Adds a nutty flavor and aroma. I prefer to use toasted sesame oil for the sesame ginger dressing, but regular works just as well.
- sea salt – Seasoning and flavor enhancement.

Put carrots, ginger, miso paste, honey, vinegar, lime juice, oil, sea salt, shallots, garlic and water in food processor. (You can also use a powerful blender, but the results may not be as smooth.) Process until the Japanese ginger paste is smooth, pulsing as needed.
