I made these low carb chicken nuggets after a vacation while pregnant.The Nuggets are one of them if only Chicken Recipes Despite being highly processed, high in carbs, and hard to find on many restaurant menus, I can live with morning sickness. (I had a lot of “fun” trying to explain why I needed to order the kids menu from many of them.) When I got home, I was happy to go back to a cleaner version that still tasted delicious!

Ingredients and Substitutes

- Boneless Skinless Chicken Breast – Standard selection of chicken nuggets keto recipes. You can also use chicken thighs, but the cooking time may vary.
- mayonnaise – We use it in place of the egg as a binder to help the crumbs stay on the chicken.use any ketone store-bought mayonnaise you like, or do it yourself Avocado Oil Mayonnaise Recipe. You can also just use whipped eggs instead, but mayo makes these tastier.
- white vinegar – Add a more authentic flavor to these granola without adding crumbs. Apple cider vinegar is another close substitute, but you can also sub pickle juice.
- Wholesome Yum Almond Flour – If you’ve never made keto chicken nuggets with almond flour before, you must try this flour!Grind fine, it sticks to chicken better than other popular keto block coatings like Parmesan or shredded pig skin.
- salt and pepper – For simple seasoning.
- olive oil – For shallow frying. You can also use avocado oil or any neutral oil you like.
Variation: Want more flavor?
These chicken nuggets only have salt and pepper to keep the prep super easy, but you can also add seasonings to the meat or mix them into almond meal. Try onion powder, garlic powder or chili powder!

How to Make Keto Chicken Nuggets

- brine. In a large bowl of water, add a few tablespoons of salt. Place chicken in water and brine for up to 1 hour. Drain and pat to try.
Tip: Why brine chicken?
Marinating produces more tender and juicy chicken pieces (I do Grilled Chicken Breast). If you don’t have enough time, you can skip this step.
- cut. Cut the chicken into cubes.
Tip: You can shred the chicken if you like.
I prefer the chicken as-is, but some nugget recipes will shred it. If you want to do this, chop the chicken in a food processor with a little water. Shape into cubes and freeze for about 20-30 minutes before continuing with the recipe.


- set up. Whisk mayo and vinegar in a small bowl. In a separate bowl, combine almond flour and seasonings.
- coat. Dip each chicken nugget into a thin layer of mayonnaise mixture.


- Add breadcrumbs. Press firmly into the almond flour mixture and coat both sides.
TIP: Use one hand for the mayo mixture and the other for the crumbs.
Avoid putting wet hands into the dry mixture too much, this will prevent the crumbs from clumping.

Storage Instructions
- Shop: Cover leftovers in the refrigerator for 2-3 days.
- Reheat: Heat the keto block in a 350°F oven. Air fryer is another great option to crisp them up.
- freeze: Add the breaded chicken pieces (cooked works best) to a lined baking sheet and freeze until set. Transfer to a freezer-safe container for long-term storage. There is no need to thaw before baking, but you may need to add a few minutes to the cooking time.

In another bowl, combine almond flour with a pinch of sea salt and black pepper. (I used 1/2 teaspoon (2 grams) sea salt and 1/4 teaspoon (1 grams) black pepper, but you can adjust as needed.) Feel free to throw in any other spices you like.

Spread a thin layer of mayonnaise mixture over each piece of chicken and press into the almond flour mixture.
