Keto Chocolate Mug Cake is a single-serve chocolate cake made with a cup. Traditionally, it is a healthy dessert cooked in the microwave and ready in a few minutes, but you can also bake it in the oven if you prefer.

The ingredients you need

This section explains how to choose the best ingredients for low-carb chocolate cupcakes, the role of each ingredient in the recipe, and alternative options. For measurement, please refer to the recipe card below.

  • Salted butter – Personally, I prefer grass-fed butter for the best flavor, if it works for you, but the non-dairy options are listed below. If you only have unsalted butter, you can use it and add a pinch of salt.
  • Sugar-free baking chocolate – Compared with using cocoa powder, this can make a moist mug cake. We add sweeteners separately, so please make sure that this is 100% unsweetened baker’s chocolate, not sweetened unsweetened chocolate.
  • The wholesome yum bleached almond flour – The main flour I use in almost all keto baked goods because of its very good texture. Do not use almond flour or coconut flour, it will not bear fruit. If you need replacement options, see below.
  • Besti Monk Fruit Allulose Blend – Besti is my favorite sugar substitute!The original version of this recipe uses ErythritolBut the monk fruit temptation mixture makes a very superior super moist cupcake.Paleo followers may prefer to use coconut candy For sweeteners.
  • baking powder – Make sure it is fresh so that your cake can expand well. If this is important to you, please double check that it is gluten-free.
  • Egg -You need a whole large egg.
  • Vanilla extract – Optional, but highly recommended for best flavor.

Alternative options

According to your needs, there are some alternatives.

  • Keto Mug Cake without Milk – Unlike many other chocolate cupcake recipes, this recipe does not have milk. Don’t worry-it’s not drying at all! The butter and chocolate inside keep it super moist. In fact, this may be the moist chocolate cupcake I have ever eaten.
  • Dairy-Free Keto Cupcakes – If you need keto chocolate cupcakes that are completely dairy-free, you can replace the butter with butter or coconut oilWhen you replace one of them, just add a pinch of salt to compensate for the salted butter.
  • Nutless option – Do not use coconut flour instead of almond flour because the batter is too dry.If you need a nut-free option, you can substitute Sunflower seed powder For almond flour, although almond flour does produce better flavor and texture.

The original recipe for how to make chocolate cupcakes uses a microwave oven to make it super fast. If you prefer the oven, no problem! We will cover both methods, so you can decide which method is best for you.

Microwave method:

  • Melted butter and chocolateYou can make your keto chocolate cake in a cup or ramekin and melt the butter and chocolate there.

  • Stir the batter. Use a spoon or fork to stir in almond flour, besti, baking powder, eggs and vanilla.

hint: Be sure to stir well. For convenience, I mix them in the same cup, but if you want to be more certain, you can first stir the dry ingredients separately in a small bowl, and then add them to the cup.

hint: This last step is really the only “trick” of the recipe. As long as your low-carb chocolate cupcakes are not overcooked, it will not dry out! You want it to be springy, but not dry.

It is delicious on its own, but my favorite way to enjoy this delicious cupcake is to add toppings. For the final keto cupcake, add:

  • Keto whipped cream -With or without sweeteners.
  • Melted chocolate – The batter of the tomato cup cake uses unsweetened baked chocolate, but I recommend topping Sugar Free Chocolate Chips, This is sweetened.
  • Chopped nuts – any type Keto Nuts Will work, such as walnuts, pecans or almonds. You can also stir them into a batter.
  • Keto Vanilla Ice Cream -My favorite ingredient!
  • Peanut butter drizzle – Heat some peanut butter in the microwave with a little coconut oil and pour it on the cake.

Storage instructions

  • Shop: If you find yourself having some extra low-carb chocolate cupcakes (I don’t know how this happened!), you can store it at room temperature for one day, or in the refrigerator for 2-3 days. I don’t recommend making cup cake batter in advance. Melted butter and chocolate will solidify when cooled, and if the baking powder is left with the moist ingredients for too long without cooking, they will lose their effectiveness.

Microwave oven instructions

  1. Melt the butter and chocolate together in a cup or 12 ounces (355 ml) of large ramen noodles, and place in the microwave (about 45-60 seconds, stirring midway). Be careful not to burn it. Make sure the ramen is at least twice the volume of the ingredients, because the mug cake will rise.

  2. Add almond flour, sweetener, baking powder, eggs, and vanilla (if using). Stir everything well until it is completely mixed together.

  3. Microwave for about 60-75 seconds until it just hardens. (Don’t overcook it, or it will dry out.)

  4. Serve with whipped cream (or coconut whipped cream used in ancient times), and/or drizzle with more melted chocolate and sweetener.

Oven description

  1. Preheat the oven to 350 degrees Fahrenheit (177 degrees Celsius).

  2. Melt the butter and chocolate together in a double pot on the stove. Be careful not to burn it. Remove from heat source.

  3. Add almond flour, sweetener, baking powder, eggs, and vanilla (if using). Stir everything well until it is completely mixed together.

  4. Transfer the batter to a large 12 oz (355 ml) oven-safe ramen noodles (or two smaller 6 oz (178 ml) ramen noodles). Make sure the ramekins are at least twice the volume of the ingredients, as the cake will rise.Baking about 15 minutesUntil just right.

  5. Serve with whipped cream (or coconut whipped cream used in ancient times), and/or drizzle with more melted chocolate and sweetener.
