- heavy cream – This forms the basis of keto pudding. For a dairy-free alternative, you could probably substitute full-fat coconut milk or coconut cream, but I haven’t tried to confirm this.I do not recommend using thinner keto milk options here, such as almond milkas the pudding may not set.
- gelatin powder – The secret ingredient in this sugar free pudding recipe is unflavored gelatin!It thickens the pudding and produces a smooth, creamy texture without the need for thickeners or cornstarch substitute.I like this brand Gelatin from grass-fed cows. I haven’t tested this recipe with other brands, so the amount needed may vary slightly if you use a different brand.
- Besti Monk Fruit Powder Allulose Blend – This is the powdered version of my usual sweetener, which I highly recommend for a smooth texture.I made this recipe with erythritol powder and other things sugar substitute In the past, but it is not very soluble and will crystallize. Both issues can lead to grainy results – almost all other brands of monk fruit sweeteners contain erythritol (check ingredients), so they have the same issue. Avoid granular sweeteners at all costs.
- cocoa powder – use high-quality unsweetened cocoa powder like this for best flavor.
- sea salt – Balanced sweetness.
- vanilla extract – Enhances rich chocolate flavor.
Unlike many other keto pudding recipes, this one doesn’t require any eggs to get the right texture.
How to Make Keto Pudding

- Let the gelatin bloom. Pour heavy cream into a small bowl. Sprinkle gelatin over top and stir immediately. Set aside to bloom. The mixture will thicken and look lumpy after a few minutes, as shown in the picture below. (You can continue with other steps in the meantime.)
Tips: Gelatin powder must be evenly sprinkled, do not pour directly into it!
This makes it dissolve. Make the gelatin and cream as smooth as possible, but don’t push too hard as the clumps will dissolve once heated.
- Heat heavy cream, bestie powder, cocoa powder and sea salt. Place all ingredients in a medium saucepan and stir over medium-low heat, stirring constantly, until the mixture is smooth and starts to bubble. Don’t let it boil.


- Add vanilla extract and cooked gelatin. Remove from heat, then stir in vanilla extract. Add gelatin mixture and beat until smooth and dissolved.
- Let cool and cover. Pour the keto pudding mixture into a mixing bowl or other glass container. Let it cool, just enough so it doesn’t melt the plastic we’re going to put on it. Stir again to remove any film on top, then immediately level the plastic with the top of the pudding.
Tip: It’s important to stick the plastic wrap tightly to the top of the pudding without air in between.
This will help prevent a film from forming on top.
- refrigeration. Chill in the refrigerator until firm, then stir well. Watch how thick, rich and creamy it gets!


Top Ideas and Variations
Everything about this sugar free chocolate pudding recipe is perfection! Sometimes, though, I like to try new ingredients. Here are some of my favorite topping ideas:
- berry – you can keep your carbs low while adding some fresh berries! Strawberries, raspberries, or blueberries are great with heavy cream keto pudding.
- nut – For extra texture, sprinkle some chopped pecans, almonds, or walnuts on top, or even mix them in.
- coconut – If you love coconut, you’ll love the sugar free chocolate pudding with some shredded coconut sprinkled on it. try it!
- chocolate – add some (sugar-free) chocolate curls on top. Not only does it add more chocolate flavor, but it looks gorgeous too. I’m not very good at making them, as shown below. 😉
- unsweetened whipped cream – Makes the perfect simple topping for a beautiful presentation. Also shown below.

- shop: This keto pudding will keep for up to 1 week if you store it in an airtight container in the refrigerator and cover with plastic wrap.
Ways to prevent pudding skin:
The only downside to homemade chocolate pudding is that it creates a thin crust on top. This happens because sweeteners and proteins shrink and concentrate when the water evaporates. The good news is that it tastes good, but you can easily avoid it entirely.
The best thing to do is to always wrap the plastic wrap tightly around the pudding unless you are serving it. Make sure the plastic wrap is in direct contact with the surface.
- freeze: For extended storage, freeze leftovers in an airtight container for up to 3 months. The frozen chocolate pudding dessert is actually perfect out of the freezer on a hot day (it tastes a bit like ice cream!), but you can also thaw it overnight and whip it in a blender before serving.
