This section explains how to choose the best ingredients for strawberry keto ice cream, what each ingredient does in the recipe, and substitution options. See recipe card below for measurements.

  • butter – for Keto Condensed Milk Ice cream base. I prefer grass fed butter, but any unsalted variety will do.
  • heavy cream – Add a creamy texture and mouthfeel to your keto strawberry ice cream. Use as a condensed milk base for later use. You should be able to substitute full-fat coconut milk for dairy if desired, but I haven’t tested this option.
  • Besti Luo Han Guo Powder Allulose Blend – The only sugar substitute I use for low carb ice cream! Unlike erythritol and most other sweetener brands, Besti dissolves completely, stay Dissolves, and keeps the ice cream smooth and scoopable (this is because allulose has a lower freezing point than other sugar substitutes).You can use a different powder instead keto sweetenerbut it may harden in the refrigerator.
  • vanilla extract – High quality vanilla extract will bring out the rich flavor of this ice cream.
  • almond milk – Prevents the ice cream from getting too thick from the cream. Use unsweetened varieties.The neutral flavor of almond milk works best in this recipe (though feel free to use vanilla!), but other Keto Milk Alternatives can also work. Coconut milk drinks make it easy to keep recipes nut-free.
  • ChocZero Candied Strawberry Jam – My favorite way to add more strawberry flavor to ice cream without the extra carbs!
  • strawberry -Fresh berries taste best in this recipe, but you can also use frozen strawberries. Just thaw and drain off any excess juices first.

How to Make Keto Strawberry Ice Cream

  1. Make keto condensed milk. Melt butter in a saucepan over medium heat. Add Besti and 2 cups heavy cream. Bring to a boil, then simmer, stirring occasionally, until thickened and reduced by half.
  2. fall. Add the condensed milk mixture to a high-powered blender and cool to room temperature. (It cools faster in a blender than in a hot pan!) Add the vanilla.

  1. purée. Add almond milk, heavier cream, then ChocZero Jam to the blender. Blend until smooth.
  2. Add berries. Place strawberries in a blender and blend until mostly smooth. For less fruit chunks, you can whisk the strawberry mixture until completely smooth. If you do want chunks, be careful – it only takes a few pulses and they disappear into a smooth consistency!

  1. chill. For best texture, refrigerate for 4-8 hours. (Don’t freeze!)
  2. agitation. Transfer the low-carb strawberry ice cream mix to your ice cream machine Stir until you reach a soft serve consistency.
  3. Scoop or freeze. Enjoy immediately, or place in the refrigerator for a firmer texture.top match Sugar Free Chocolate Syrup or ketogenic cream!

Tips for the Best Keto Strawberry Ice Cream

Tips for the Best Keto Strawberry Ice Cream

Use these tips to ensure your ice cream stays as smooth and creamy as you want it to be.

  • For faster condensed milk use cauldron. It helps the process go faster!
  • Use allulose-based sweeteners. Besti contains a similar sugar blend of Monk Fruit and Allulose. Unlike other keto sweeteners, it makes frozen foods like ice cream softer.
  • For easier scooping, let it sit. After removing from the refrigerator, the ice cream should sit at room temperature for about 10 minutes. (unlike Regular Keto Ice Cream, this keto strawberry ice cream benefits from being slightly thawed before scooping. )
  • Want a little less fat and calories? You can substitute the same amount of almond milk for the heavy cream you added at the end, but the ice cream will have a less creamy texture. (Don’t replace the cream in the condensed milk or it won’t show up.)
  • Don’t have an ice cream maker? Make a no-stir version by skipping the stirring step and freezing right away. You will need to stir the mixture every 30 minutes for the first 2 hours, then every hour until set. or, Keto Mason Jar Ice Cream It’s also agitator-free and doesn’t require agitation.

Variety

  • add chocolate chips – Add to Keto Chocolate Chips Delivered to your ice cream maker within the last 5 minutes of churning.
  • use different berries – For mixed berry flavors, swap strawberries for other low-sugar keto berries (final carb content may vary).

Storage Instructions

Place ice cream in an airtight container and refrigerate for 2-3 months. Let sit on the counter for a few minutes before scooping and serving.

  1. melt butter in a large wok Or a skillet (not a skillet!) over medium heat.

  2. Add powdered Besti and 2 cups (473 ml) heavy cream. Bring to a boil, then reduce heat.simmer for 30-45 minutes, stirring occasionally, until the mixture thickens (like condensed milk), coats the back of a spoon, and reduces in half in volume. It also pulls away from the pan when you tilt it. (This will be faster if you use a larger pan.)

  3. Pour condensed milk into a large mixer and let it cool to room temperature. Add vanilla extract and stir.

  4. Add almond milk, remaining heavy cream, and ChocZero strawberry jam. Blend until smooth. Add strawberries. Pulse a few times until mostly smooth but there are still some very small chunks of strawberries. (Or you can completely puree it if you prefer.)

  5. Refrigerate the mixture for at least 4 hours or overnight. (You can skip this step if you really want to, but the texture will be better if you cool it.)

  6. Transfer the mixture to your ice cream machine Stir according to the manufacturer’s directions, or until the ice cream is the consistency of soft ice cream. (mine takes about 20-25 minutes.)

  7. Serve immediately, or for firmer, scoopable ice cream, transfer to a freezer container and freeze for 2-4 hours until firm.
