If you’re on a tight schedule and need a weeknight meal, but still want something healthy and delicious, ditch your taco shells and make Low Carb Keto Taco Casserole!kinda like a slow cooker Keto Chili, but each bite is infused with rich taco flavor. Since it’s a Crock Pot Taco Casserole, the slow cooker does all the work – but if you want to make it last minute, I’d go with the oven below.

Ingredients and Substitutes
This section explains how to choose the best ingredients for a low-carb taco casserole, the role each ingredient plays in the recipe, and substitution options.For measurements, see recipe card below.
- avocado oil – For frying ground beef. Use any neutral cooking oil you like.
- Ground beef – I usually use 85/15 grass fed ground beef from here, but either will do.If ground beef is not your thing, you can easily use ground turkey, ground chicken or even Mexican Chorizo.
- taco seasoning – You can’t have a tomato taco casserole without taco meat, and that means taco seasoning!I do it myself Taco Seasoning Mix, but you can also use store-bought mixes. Note that my seasoning has salt in it, but if yours doesn’t, add 1 1/2 to 2 teaspoons of salt.
- bell pepper – Use orange, yellow or red bell peppers for color variety.
- onion – I used yellow onions, but white or red onions would work too.
- Green Chili Diced Tomatoes – Chili will add a little heat. If you prefer a milder Mexican tomato casserole, substitute regular diced tomatoes for a can or two. Just be mindful of the size – the ones with chiles are 10 oz each, while the ones without are usually 14.5 oz, and your recipe will call for a total of 20 oz whether you use with or without chili.
- cheddar cheese – Use a good quality melted cheese for the perfect finish. Substitute Mexican blend cheese, mozzarella, Colby jack, or Monterey jack if you prefer.

How to Make Keto Taco Casserole in the Crock Pot

- Sear the meat. in a big wok or large skillet, heat avocado oil over medium heat. Add ground beef. Cook, dividing with a spatula, until browned. Add water and taco seasoning. Bring to a boil, then simmer until thickened and taco meat forms.
- Assemble the casserole. Add ground beef mixture slow cooker, along with diced peppers, onions, and drained diced tomatoes and green peppers. Mix well.


Tip: Drain the tomatoes and peppers.
Otherwise, water may come out after the casserole is cooked. If this happens, you can use a large ladle or ladle to remove excess liquid before adding the cheese.

- Melt the cheese. Set the slow cooker to high and sprinkle the shredded cheese on top. Cover and cook until cheese melts.

How to Make Keto Taco Casserole in the Oven

- bake. Place the keto taco casserole in the oven and bake until it’s hot and bubbly. Peppers should be soft.

storage instructions
- shop: Let the casserole cool completely before storing. Then, transfer it to an airtight container and store in the refrigerator for up to 5 days.
- Meal Prep: You can make this easy tomato taco casserole ahead of time in a number of ways. When ready to cook, brown the ground beef and assemble the rest of the casserole, setting it warm in your Crock Pot for up to 4 hours, or store the entire casserole in the refrigerator for up to 5 days.
- Reheat: You have a variety of reheating options. Heat it to high in a slow cooker, reheat it in the microwave, or place it in a casserole and pop it in a 350-degree oven. (If you transferred the casserole to a slow cooker or other dish, sprinkle the top with fresh shredded cheese before reheating.)
- freeze: You can freeze oven baked or Crock Pot taco casserole as long as there are no toppings on top. (Fresh topping doesn’t freeze well.) Let cool completely, then store in an airtight container or freezer bag in the freezer for up to 6 months. Thaw overnight, reheat until hot, then add toppings.

Top the casserole with any toppings you like, such as lettuce, tomatoes, avocado, and/or cilantro.
