Choose lamb chops:
- lamb chops – Looks like a T-bone steak with tender meat.
- epaulettes – Also known as blade chops or arm chops. They are thinner and wider than other chops, with more connective tissue and fat.
- Ribs – These chops are cut from lamb chops and usually the narrow ends of the bones are cleaned, which is what I do.
This recipe uses lamb chops, but the marinade can be used with any of these lamb chops. Grilled lamb chops and shoulder chops will take longer, though.
Grilled Lamb Chops Marinade:
- olive oil – i used Extra virgin olive oilbut you can use any neutral oil you like.
- lemon juice – The acid helps to tenderize the meat.Use freshly squeezed for best flavor, but bottled will work fine. If you want to change it, use balsamic vinegar instead.
- garlic – You will need fresh garlic cloves as we will be crushing them.
- fresh herbs – I use mint, parsley and dill all The breath of summer. But if you’re making this dish in the fall, fresh rosemary and thyme work well. You will need a total of 3 tablespoons of fresh herbs, any combination you like can be used.
- salt and pepper

How to Grill Lamb Chops

- pickled. Combine all the Lab Ribs BBQ Marinade ingredients in a large bowl: olive oil, lemon juice, crushed garlic, fresh herbs, salt and pepper. Add lamb chops, turn over, and cover.
Tip: How long to marinate?
Marinate the ribs at room temperature for 30-60 minutes, or up to overnight. If marinating longer than 60 minutes, refrigerate chops and allow to come to room temperature before continuing.
- Baked. Preheat the grill (or bakeware) to medium-high temperature. (Usually 10-15 minutes on an outdoor grill or 2-3 minutes on a grill pan, which is important to get a good sear.) Grill the lamb chops for a few minutes on each side to achieve the desired doneness (see Cooking below time) .


- rest. Transfer ribs to a plate and tent with foil. Rest 5 minutes before serving.
Tip: Don’t skip the break.
Lamb chops will stay juicy if given time to rest. During this phase, their temperature will also increase by an additional 5-10 degrees.

How long does it take to grill lamb chops?
The cooking time for the ribs depends on your desired doneness. Use this timeline as a guide:

The temperature above is when you remove the lamb chops from the grill – it will rise about 5 degrees when resting.always use meat thermometer to ensure proper doneness.
Tip: The recommended doneness for lamb chops is medium rare to medium.
Roasting them to medium or well done may give them a gamey taste.
Storage Instructions
- Shop: Wrap the ribs tightly and store in the refrigerator for 3-4 days.
- Meal preparation: Prepare and marinate the ribs 24 hours in advance, or simply make the marinade and refrigerate until ready to use with the meat.
- Reheat: Gently heat the ribs in a warm oven or skillet.
- freeze: Wrap tightly and store in a freezerable container for 2-3 months and thaw overnight before serving. While you can safely freeze them, chops can be drier after thawing and reheating.

In a large bowl, toss together lamb chop marinade ingredients: olive oil, lemon juice, crushed garlic, fresh herbs, salt and pepper.
