I don’t know about you, but I’m always looking for ways to get my kids to eat more vegetables.mine Cheesy Broccoli Roast is a good way to do this.
Another super tasty recipe that includes veggies is this classic macaroni and cheese with baked sweet corn and baby powys. It provides the goodness of milk and the added nutrients of vegetables. Of course, it’s not just for little kids, the whole family can enjoy it.
Aside from being delicious, I love that this is such a quick and easy recipe, perfect for a quick midweek dinner on a busy day for all of us!

raw material
300g macaroni rolls
100g frozen sweet corn
100g frozen peas
50g plain flour
50 g butter
500ml milk
250g grated cheddar cheese
broccoli
method
Preheat oven to 190ºC / gas mark 5.
Put the macaroni in the pan and cook for 10 minutes.
Melt butter in a nonstick pan. Add the flour and stir constantly for a few minutes.
Slowly add the milk to the constantly stirring batter. (make sure it doesn’t stick)
Add the vegetables to the pasta and cook for a few more minutes until the pasta is cooked but still firm.
When the white sauce thickens, remove from heat, add 200 grams of cheese, and stir until melted.
Drain pasta with vegetables and place in a large oven proof dish. Pour the cheese sauce on top and mix together.
Sprinkle the remaining cheese over the top and place it in the oven for 10 – 15 minutes, until golden brown and bubbly.
Serve immediately with vegetables of your choice.
