- Baby Golden Potatoes – Do not peel.
- Olive oil – Coconut oil, avocado oil, corn oil, or canola oil are all good swaps.
- Salt – Kosher salt is best.

- Parmesan cheese – I prefer freshly grated parmesan cheese.

What is the best mashed potato?
All baby potatoes are perfect for this recipe. I prefer starchy varieties like russets because they have a fluffier inside. However, waxy potatoes like baby sweet potatoes and fingerlings contain more water and have a naturally creamy interior when cooked.


How to Make Garlic Mashed Potatoes
Use more olive oil as it will crisp up the potatoes. Scroll to the recipe card at the bottom of the post for more detailed instructions.
- Prepare the oven. Preheat oven to 450F.
- Boil the potatoes. Place the potatoes in the pot and cover them with water. Bring to a boil and reduce to a simmer. Let them cook until tender. Drain potatoes and spread on baking sheet. Let them rest for 5 minutes, but do not let them cool completely.




- Make the garlic herb mixture. Stir garlic, Parmesan cheese, and thyme in a small bowl. Set it aside.
- Crush them. Gently crush the potatoes with the back of a spoon or your hands.
- Season them. Drizzle the mashed potatoes with olive oil and sprinkle with salt. Repeat this process on the other side.




- bake. Place them in the oven for 15 minutes. Turn them over and bake for another 15 minutes. Remove them from the oven.
- Add garlic herb mixture. Sprinkle with Parmesan cheese garlic herb mixture to taste.

The secret to the best mashed potatoes is to make sure they're cooked so you can really smash them.
- Make them spicy. Add red pepper flakes, cayenne pepper, or chili oil to taste.
- Don't undercook them. Make sure the potatoes are fork-tender, otherwise they won't crumble properly and will cook unevenly when baked.
- Use dipping sauce. Aioli, Dijon, and chili mayo are my favorite potato dips. Use your favorite!
- Do not add salt to the water. Ignore recipes that ask you to season boiling water and make it “salty like the sea.” It's impossible to know how much salt a potato will absorb, so it's easier to end up over-salting it. Do not do this.
- Add more spices. Stir together 1/2 teaspoon chili powder, 1/4 teaspoon onion powder, and 1/2 teaspoon dried parsley for more flavor. Spread the mixture over the potatoes before baking.
- Check the temperature. Use an oven thermometer to confirm that the temperature is actually 450F. It needs to be so hot to get that lovely golden look without drying them out or burning them.
- Draw a line Line a baking sheet with parchment paper to reduce cleanup and prevent potatoes from sticking.

- In a small bowl, add garlic cloves, Parmesan cheese, and fresh thyme. Mix together and set aside.
