Caldo de pollo (which means chicken soup Spanish) is a delicious Mexican chicken soup made with chicken and vegetables. This is also common in Latin America. Traditional versions usually include chicken, carrots, celery, potatoes, tomatoes, onions, cilantro, and sometimes beans or corn.

- olive oil – For stir-frying vegetables. I like extra virgin olive oil, but you can use any cooking oil you like.
- fresh vegetables – Include onions, carrots, celery and bell peppers. These need to be cut into bite-sized pieces. My caldo de pollo recipe doesn’t include potatoes, many other recipes do, but you can definitely add them if you want.
- garlic -Fresh garlic tastes best in this Mexican chicken soup, but you can also use canned minced garlic.
- chicken soup -I used a low sodium broth, but you can use any variety you like (or make your own chicken bone soup).
- diced tomato – We used the canned version and added liquid to this soup.
- chicken breast – Some caldo de pollo recipes use whole chicken or chicken nuggets, but I find it easier to use boneless skinless chicken breasts and chop them up after they’re cooked. You can also if you like chicken thighs.
- seasoning – My simple caldo de pollo seasoning includes sea salt, black pepper, Cumin powderand optional fresh cilantro.
- toppings – Includes avocado, sour cream, lime wedges and cilantro. These garnishes are optional but great for extra fresh flavor!

- saute. in a hot oil dutch oven or cauldron until sparkling. Add onion, carrots, celery, and bell peppers and sauté until tender. Add the garlic and sauté another minute, or until fragrant.
- simmer. Add broth, tomatoes and liquid, chicken, cumin, salt and pepper. Bring to a boil, then reduce heat until chicken is cooked through.
- Shred. Remove the chicken, shred it, and put it back into the pot. Simmer the Mexican Chicken Broth for an additional 5 minutes.
- season. Add chopped cilantro and season with salt and pepper.
- Finish. Pour caldo de pollo soup into bowls and serve with any desired garnish.

Storage Instructions
- Shop: Cover in an airtight container and store in the refrigerator for 4-5 days.
- Meal preparation: Peel, dice, and chop vegetables ahead of time and store in the refrigerator until ready to cook. You can also make the Mexican Chicken Soup recipe ahead of time and keep in separate containers for ready meals.
- Reheat: Heat on the stove over medium heat or in the microwave until hot.
- freeze: Cool soup completely, transfer to freezer-safe containers or freezer bags, and freeze for up to 3 months.

Take the chicken out of the pan and shred it with two forks.Put the shredded chicken back into the pot and cook 5 minutes left.
