long before i wrote my kitchen utensilsk, I served this low FODMAP chicken recipe for the first time at our annual murder mystery party.
Yep, it’s as silly and sensational as you might think. A pre-planned fancy dress party that ends at 10pm? What a 30-something dream is made of!
Last year, we picked a mansion theme where someone died in the will of a notorious billionaire. But after a recent rewatch of The Unselfish, we decided this year’s plot needed to be a period drama, preferably one involving flowy dresses, short gangster ties, and low FODMAP chicken cacciatore!



Yes, I’m as much about menus as fashion. I envisioned Baked Macaroni Alaba Geshe. Alley Cat Arugula Salad. Big Daddy’s branches in the blanket. Cat’s Meow Chocolate Chip Cookies. Tub gin.And, of course, Al Capone’s favorite cacciatore was reinvented as Low FODMAP Chicken Recipes.
Whenever I am entertaining on the weekends, I try to make a few things ahead of time, and I know I can make an entree in a single pan and bake and reheat before the party is perfect.More importantly, I wanted to make sure that the center of the meal was Low FODMAP Dinner Recipes I can eat it safely because even with a small margin of forgiveness, it’s not fun to sing jazz in a place that says lighthearted when you’re in a mess!

Although I have gone back to taking FODMAPs because I Natural SIBO treatment, I still feel my best when I do it in moderation. It saves me time, makes me feel my best, and the end result tastes just as delicious.

One Pan Low FODMAP Chicken Cacciatore

Here’s an easy one-pot dinner recipe for low FODMAP chicken cacciatore. Garlic oil and low-FODMAP tomato sauce remake this classic Italian chicken dish into a low-FODMAP-friendly meal. Even without the garlic and onions, this chicken cacciatore is full of classic Italian flavor.

- 4 spoon Garlic Infused Olive Oil divided into
- salt and freshly ground pepper
- 2 lb boneless skinless chicken thighs
- 2 baby carrots thin slices
- 2 Medium Celery Ribs thin slices
- 1 red bell pepper diced
- ¼ teaspoon red pepper flakes
- ½ cup dry red wine or low FODMAP chicken broth
- 2 spoon Thinly sliced pitted Kalamata olives
- 2 cup Low FODMAP Tomato Paste
- 4 sprigs fresh thyme or 1/4 teaspoon dry
- 4 sprigs fresh oregano or 1/4 teaspoon dry
- 2 spoon fresh chopped Italian parsley

In a large frying pan, heat 2 tablespoons garlic oil over medium heat. Season the chicken thighs with salt and pepper, then add them to the pot evenly in batches. Cook chicken until golden brown crust forms on both sides and chicken is cooked through, about 10 minutes. Remove to a plate and repeat with remaining chicken. shelved.

Add the remaining garlic oil to the pot along with the carrots, celery, and bell peppers. Sauté the vegetables, scraping up any brown bits from the bottom of the pan, until tender, about 5 minutes. Season with 1/2 teaspoon sea salt and red pepper flakes.

Pour in red wine and simmer until reduced by at least half, 2 minutes. Add olives and tomato paste and stir to combine. Carefully return the chicken to the pan and place it in the sauce, making sure it’s fully coated. Stuff the herbs between the chicken thighs. Simmer over medium-low heat until sauce thickens and chicken is tender, 10 to 15 minutes. Garnish with parsley, remove chicken cacciatore directly from the pan, and serve with gluten-free pasta or quinoa.

To make this Whole30 approved, put the chicken stock in the wine.
