- Brussels Sprouts – Remove any damaged or yellowed leaves before cutting in half. Keep in mind that the smaller ones are sweeter than the larger ones and may take less time to bake. For larger ones, you may need to cut them into quarters to have more surface area for browning.
- olive oil – I prefer extra virgin olive oil in this recipe, but use your favorite neutral cooking oil (avocado oil works great too!).
- seasoning – garlic powder, sea salt (or kosher salt), and black pepper. You can also add cayenne pepper if you like more spice.
How to Roast Brussels Sprouts in the Oven

- Prepare. line a king size bakeware (or two small) parchment or foil, if desired. Cut sprouts in half lengthwise and quarters for larger ones. Toss them in olive oil, garlic powder, salt and pepper.
- arrange. Place the Brussels sprouts on the pan in a single layer.
- bake. Cook Brussels sprouts in the oven, tossing halfway through, until browned and slightly charred.

The exact Brussels sprouts cooking time will vary based on the size of the sprouts and preferred doneness.However, you can expect roasted Brussels sprouts approx. 25-35 minutes at 400°Funtil slightly charred.
Tips for the Best Brussels Sprouts Recipe
To avoid bitterness or soft sprouts, follow these tips:
- Foil or bare pans work best. This will yield more brown brussels sprouts, but if you don’t want the foil to touch the food and still want to clean up easily, parchment is fine. (I opted for parchment paper this time, as shown, but foil is often used as well.)
- Make sure each sprout touches the pot, preferably leaving space between them. That’s the trick to crispy Brussels sprouts! If the pan is too crowded, they will steam instead of caramelizing. So make sure your baking sheet is big enough, or use more than one if you must.
- Roast bean sprouts on high heat (400 degrees). Lower temperatures will cook them more slowly, reduce browning and give them a more mushy and steamed texture.
- Roasted darker and crispier. If you like the absolute crispest brussels sprouts char, put them under the broiler for a few minutes at the end.

Storage Instructions
- Shop: Cover leftovers in the refrigerator for 3-4 days.
- Meal preparation: Cut Brussels in half lengthwise, then add oil, garlic powder, salt and pepper. Store up to 24 hours. Bake when ready.
- Reheat: Heat Brussels sprouts in a 400°F oven until hot, or pan fry them to regain some crunch. Microwaves can reheat, but they won’t be crispy anymore.
- freeze: You can freeze this roasted Brussels sprouts recipe for 2-3 months. However, they become more mushy after thawing and reheating.
