How to Make Paleo Pizza Crust

This section shows how to make an almond flour pizza crust, with step-by-step photos and details about the technique. See the recipe card below for full instructions.

  1. mix. In a large mixing bowl or food processor, combine the almond flour, oil, eggs, and salt until a dough forms.
  2. roll. Roll out the paleo pizza crust into a circle. Poke the crust with a fork to prevent bubbling.
Tip: Use two layers of parchment paper to avoid sticking.

Alternatively, use your fingers to press down the almond pizza crust to an even thickness. If you find that the almond flour dough is too sticky to roll or press, you can refrigerate it for a while, which will help with this. Reserve the bottom layer of parchment paper for the baking step so the crust doesn’t stick.

  1. bake. Transfer crust to a baking sheet or pizza stone and bake until golden brown.
  2. top or store. After the crust is pre-baked, add the toppings and bake again until heated through. (I added mushrooms, bell peppers, red onion, fresh basil, and a little fresh mozzarella, but don’t add cheese to the paleo.) Alternatively, leave the crust as is and cool completely for storage.

texture change

Paleo pizza crust with almond flour does have some texture differences compared to the traditional version. Use these tips to make it the way you like it.

For crispy skin:

The crust is naturally crispy, but if that’s what you’re looking for, these tips will help…

  • Roll it out thin. I like to make my almond flour pizza dough a quarter inch thick so it’s crispy. You can make it any thickness you like, but thicker crusts take longer to cook through, and if you make it thicker, you’ll find more of the almond flour nutty flavor.
  • Keep an eye on it. Once the crust begins to burn, it develops rapidly.

For a chewy crust:

I love the simplicity of this paleo pizza recipe, but if you’re more chewy, try adding:

  • Xanthan Gum – This won’t be strictly paleo, but 1/4 to 1/2 teaspoon of xanthan gum is the easiest to add for a chewy result.
  • gelatin powder – Start by mixing a tablespoon with a little water and let it bloom, then add it to the dough using a hand mixer or food processor.
  • Tapioca Flour – If you want a paleo pizza but don’t need it to be low carb, you can substitute tapioca flour for 1/4 to 1/2 of the almond flour for a more chewy result.

Storage Instructions

  • Shop: Cool the prebaked crust completely, wrap tightly, and refrigerate for 3-5 days.
  • Reheat: Heat in a 350°F oven until golden brown with any toppings used.
  • freeze: Wrap the cooled crust tightly and freeze.
