Honey Mustard Chicken Marinade:
- 4——6 Farmer Focus boneless skinless chicken breast, approximately 2 lb. (See description)
- ½ teaspoon Salt and pepper
- 2 tbsp Whole wheat mustard
- 2 tbsp Dijon mustard
- 1/4 cup Honey
- 1 tbsp Apple cider vinegar
- Preheat the oven to 400ºF.
- In a small bowl, combine the spice mixture: garlic powder, chili powder, salt and pepper.
- Mix vegetables in a large bowl: cauliflower or broccoli, green beans, carrots, potatoes, red onions, oil and spice mixture. Pour on a rimmed baking sheet and bake for 25 minutes.
- At the same time, put the chicken breasts into a large bowl of vegetables and sprinkle with salt and pepper.
- In a small bowl, combine mustard, honey, and apple cider vinegar. Brush on the chicken and marinate while the vegetables are cooking.
- After 20 minutes, take out the pan and move the vegetables to the sides to make room for the chicken. Place the chicken breast in the middle of the pan and pour it over any reserved marinade.
- Continue to bake for 15 minutes or until the chicken is fully cooked.
- Take it out of the oven and serve it with the pot juice while it is still hot! Sprinkle the vegetables with extra salt and pepper, and any herbs as needed!
