  • Mix spices. Stir garlic powder, cumin powder, salt, paprika, coriander, and black pepper in a bowl until well combined. Set it aside.
  • Prepare chicken. Pat chicken thighs dry with paper towels to remove excess moisture.
  • Add spice rub. Sprinkle spice mixture evenly over chicken thighs. Gently massage the spice into your thighs to ensure even application.
  • Brown the chicken. Place a large saucepan over medium-high heat. Add avocado oil and fry chicken for 5-6 minutes on one side, until golden brown crust forms. Flip the chicken and cook the other side for an additional 5-6 minutes, or until no visible pink is visible in the center. Remove chicken from heat and place on a plate.

  • Make the sauce. Reduce the heat to low and add the cream and minced garlic to the pan. Use a spoon to gently scrape up any browned bits from the bottom of the pan.   • Bring it to a boil. Return chicken to pot and simmer for 1-2 minutes. Spoon some sauce on top. Remove from heat.

These One-Plate Parmesan Chicken Thighs with Marinara Sauce are a quick and easy weeknight dinner you’re sure to love.



  1. In a small bowl, add garlic powder, cumin powder, salt, 1/2 tsp. smoked paprika, coriander and black pepper. Mix together the spices. Set aside.
  2. Pat chicken legs dry.
  3. Sprinkle chicken thighs with prepared spice mixture. Gently rub mixture into thighs.
  4. Heat a large skillet to medium-high heat. Add avocado oil to the pan and add the chicken legs to the pan. (You want to hear the hiss)
  5. Fry the first side for 5-6 minutes. Turn the chicken over and cook the other side for 5-6 minutes, or until no pink is visible.
  6. Remove chicken from pan and place on a plate.
  7. Turn heat to low. Add cream and minced garlic to skillet. Use a spoon or whisk to scrape up any good brown bits from the bottom of the pan. Stir until garlic is fragrant and butter is melted.
  8. Add Parmesan cheese, smoked paprikaand red pepper flakes. Stir to combine everything.
  9. Return chicken to skillet and simmer for 1-2 minutes. Remove from heat.
  10. Spoon some of the delicious sauce over each chicken drumstick.
  11. Garnish with a tablespoon of Parmesan cheese and chopped chives.
