Ingredients and Substitutes
This section explains how to choose the best toppings for arugula pear salad, what each ingredient does in the recipe, and substitution options. For measurements, see recipe card below.
salad:
- arugula – This dark leafy green has a velvety texture and mild peppery flavor that complements the other ingredients. If you can’t find arugula, substitute a bag of mixed greens or any lettuce you like.
- Anjou pear – I prefer green pears because of their firm flesh and greenish color, but red Anjou pears work well too. If you’re using softer pears, such as Bartlett pears, slice them thin so they don’t crumble.
- feta cheese – Freshly crushed, or get the pre-crushed variety. If you like a different cheese, you can easily make a Pear and Gorgonzola Salad, Pear Blue Cheese Salad, or Pear Goat Cheese Salad.
- Walnut – I use raw, unsalted walnuts for an earthy shortbread. walnut Will make another tasty substitute.
dressing:
- Extra virgin olive oil – I recommend using a good quality oil as the flavors in the sauce will come through. You can also use a more neutral oil like avocado oil.
- white wine vinegar – Adds bright flavor and helps emulsify dressings. You can also use apple cider vinegar, red wine vinegar, or lemon juice instead.
- Maple sugar – adds tangy sweetness to pear salad recipes. For zero sugar and the same maple flavor, I use This Sugar-Free Maple Syrup.
- sea salt and black pepper – Convenient seasoning.
