There’s no more classic summer side dish than Creamy Potato Salad. this is my favourite! It’s made with just a few simple ingredients, yet packed with all the best flavors and textures.
We boiled three kinds of potatoes to perfection, then sprinkled with salty crispy bacon slices, hard boiled eggs and fresh shallots. All of this goodness is served in a dressing made from mayonnaise, spicy mustard, and more.

- Potato: I like to use a mix of purple, yukon gold, and sweet potatoes in this recipe.
- dressing: Our creamy sauce is a combination of mayonnaise, grainy mustard, apple cider vinegar, lemon juice, sea salt, garlic powder, black pepper, and coconut sugar or maple syrup.
- bacon: The smoky saltiness of the bacon is the perfect contrast to the creamy sauce and soft potatoes.
- Chives: Fresh scallions add the perfect fresh flavor.
- Hard-boiled eggs: A chopped hard-boiled egg is a delicious way to add some extra protein to your potato salad.

How to Make Potato Salad
This easy potato salad recipe takes just minutes to whip up after prepping your ingredients.
- Boil the potatoes: In a large pot, bring water to a boil and add potatoes. Cook until fork tender, then drain, rinse with cold water, and pat dry.
- Hard boiled eggs and bacon: While the potatoes are cooking, cook the eggs and cook the bacon if desired.
- To make the dressing: In a bowl, whisk together all seasoning ingredients.
- Merge and serve: In a large bowl, combine potatoes and dressing until completely coated. Add the bacon, eggs, and scallions, toss to coat, and serve.




What are the best potatoes for potato salad?
In general, waxy potatoes are best for potato salad because they hold their shape better.
For this recipe, I like to use a mix of potato varieties—purple, Yukon gold, and sweet potatoes. Purple and Yukon Gold potatoes are both waxy varieties. Sweet potatoes are not considered sticky potatoes, but they do add a nice and soft texture to salads.
How long do you cook potatoes for potato salad?
It depends on the size of potatoes you are using. I use baby potatoes and usually plan on cooking them for 15-20 minutes to make sure they are fully cooked.
The best way to check them is with a fork. If the fork pierces the potato easily, the potato is ready to eat. If there is any resistance, they need more time.

Tips and Notes
- Potato: I use baby potatoes for this recipe so I don’t chop them up. If you’re using regular potatoes, you’ll need to chop them into smaller pieces before boiling.
- Rinse the potatoes after cooking. Boil the potatoes, then rinse well with cold water to stop the cooking process and allow to cool.
- Boiled eggs: To boil eggs, you can use my Instant Pot How to Cook Eggs, cook them on the stoveor steam them.
- When steaming eggs, Pour 1 inch of water into the pot. Place the steamer in the pot, then cover and bring the water to a boil. Add the eggs, cover again, and cook for 6-11 minutes (less if you like them soft-boiled, more if you like them hard-boiled). Once cooked, immediately remove the eggs and place them in a bowl of ice water. Once cooled, peel and chop and serve.
- bacon: You can cook bacon on the stove, in the ovenor in the air fryer!

How Long Does Potato Salad Keep?
Store potato salad in an airtight container in the refrigerator for 3-4 days.
Keep in mind that the longer it sits, the softer the bacon will become. If you like your bacon a little crispier, keep it separate and add just before serving!
Can You Freeze Potato Salad?
I don’t recommend it. While it’s technically safe to freeze, mayonnaise sauce can turn watery when thawed.
