Ingredients and Substitutions

- broccoli – This vegetable is available all year round, but peak season is from October to April. Look for vibrant green stems and small, tight-knit florets. Trim 1-2 inches from the stem. If the pieces are large or uneven in size, slice lengthwise along the stem. The consistent thickness ensures they cook at a similar rate.
- olive oil – This adds flavor, promotes browning, and helps the dressing stick. You can also use avocado oil or any heat-resistant oil to cook the broccoli.
- seasoning – I only used salt and pepper. You can also try using garlic powder, lemon zest, red pepper flakes, or grated Parmesan cheese.
Variation: Add garlic.
If you want roasted garlic broccoli, you can use the same method I did Garlic Green Beans. Start by roasting the broccoli on its own until almost done, then add sliced or minced garlic in the last few minutes. This will avoid burning it. Another option is to sprinkle the broccoli with garlic powder before roasting.
How to cook broccoli

- season. Arrange vegetables in a single layer on baking sheet Baking pan. (You can top with foil if desired.) Drizzle with olive oil and season with salt and pepper. Move the pieces together for better coating, then spread again into a single layer.
- bake. Roast the broccoli until tender and the florets are crispy.
Tip: Don’t overcrowd the pot.
This may cause the broccoli to be steamed instead of roasted, making it mushy instead of crispy. Make sure each piece touches the pan.

Other Ways to Cook Broccoli
I think baking is the best way to cook broccoli because it’s so easy and hands-free, but you can cook it in other ways too. All of these broccoli recipes are easy to make:
- Sautéed Broccoli – Add a little olive oil to the skillet and add the broccoli. Sauté for about 5-7 minutes, turning occasionally, until edges are soft and slightly crisp.
- Air Fryer Broccoli – Preheat air fryer to 400 degrees Fahrenheit. Drizzle the stems with a little olive oil and season with salt and pepper. Place in a single layer in the air fryer basket and cook for about 5-7 minutes, shaking the basket halfway through, until tender and slightly crispy.
- Roasted Cauliflower – Add olive oil, salt and pepper. Place directly on the grill and cook for about 3-5 minutes per side, or until tender and lightly charred.

- What is broccoli? Broccoli is a green vegetable that is a cross between broccoli and Chinese broccoli (Gailan). It has small flowers and long, thin peduncles. “Brocolini” means “little broccoli” in Italian, which is why it sometimes gets its name.
- Broccoli vs. Broccoli: What’s the Difference? Broccoli is similar to broccoli but has smaller flowers and thinner stems. It also has a sweeter, milder flavor, whereas regular broccoli has larger flowers and a stronger flavor.
- Broccoli Rabe vs. Broccoli: What’s the Difference? Broccoli rabe, also known as rapini, is more closely related to radish than broccoli, with bitter leaves and small florets. Broccoli, on the other hand, has fewer leaves and its florets are more similar to broccoli.
- How long to bake broccoli? Roast the broccoli for about 14-18 minutes, until the stems are tender and the florets are crispy.
Storage instructions
- Shop: Store leftover roasted broccoli in an airtight container in the refrigerator for 3-4 days.
- Reheat: Simply heat it in the microwave for about 1-2 minutes, or quickly sauté it in a hot pan with a little oil until warm.
- freeze: Blanch the broccoli in boiling water for one minute to preserve its flavor and texture when frozen. Shake in ice water, then dry and freeze in ziplock bags for up to 3 months. When ready to bake, stir in olive oil and toast, adding a few minutes to cooking time.
