Great, now finally I have the perfect grilled eggplant recipe for you to try. I’ve kept it simple with a basic version, but I’ll also tell you some top ideas (including feta!) that go perfectly together to put your eggplants on the grill.

How to Roast Eggplant

  1. Preheat. heated outdoor grill or bakeware to medium-high temperature. For outdoor grills, a preheat time of at least 15 minutes is optimal.

  1. season. Brush half of the oil mixture over the eggplant slices. Flip over and repeat on the other side.
  2. grilled. Place the eggplant slices on the grill and cover. Bake until soft and caramelized on both sides.

How long does it take to roast an eggplant?

Grill the eggplants on the grill for 3 to 5 minutes per side. It’s done when the slices are charred on the outside and tender in the middle. They should no longer look white.

This is already an easy recipe for grilled eggplant, but here are some extra tips for success.

  • When slicing, cut off the leaf ends of the eggplant at the end. You can use this end to help hold the eggplant when you cut it.
  • Large eggplants require extra preparation. Small to medium eggplants are usually not bitter, but medium to large eggplants can. To avoid bitterness, sprinkle eggplant slices with 1/2 tablespoon of sea salt and let stand for 15-20 minutes. Wipe off salt and any moisture with a paper towel and follow the recipe as written.
  • Eggplant does not need to be soaked. Some say it helps remove bitterness, but I find it unnecessary.
  • Do not undercook. The roasted eggplant should be more yellow in color (not white), very soft, and caramelized. If you undercook it, it will taste bland and firm.

Serve straight to the table, or spread out on a plate and top with additional sauces and seasonings such as:

  • goat cheese – Add crumbled feta after roasting, or place a large dollop of feta over the eggplant on the grill, cover and let it soften.
  • fresh herbs – Parsley or basil would be delicious. You can add them to the marinade, but I prefer to sprinkle them on top of fresh.
  • lemon – Add freshly squeezed lemon juice to the marinade, or simply serve the final dish with lemon wedges.
  • red pepper flakes – Mix with marinade and taste.
  • sauceTahini or balsamic glaze is a good choice.

Storage Instructions

Store leftovers in the refrigerator in an airtight container for up to 5 days.

Can you freeze roasted eggplant?

Do not. Avoid freezing roasted eggplant recipes (or any eggplant recipes) as this vegetable can become too mushy after thawing.
