What is fennel?
Fennel is a vegetable in the carrot family that has a mild fennel flavor, similar to licorice. It’s a perfectly edible plant with stems that look like celery and leaves (leaves) that look a lot like dill.
Fennel grows in the cooler months, late fall, winter and early spring.you can often find italian recipes (Fennel seeds are often used in pizza sauce), but can be used in a variety of dishes.

- bulb fennel – You can usually find raw fennel bulbs in the produce section of most grocery stores, and they are usually sold whole.
- olive oil – Promotes browning and caramelization and helps seasonings adhere. I used 3 tbsp. You can reduce the oil to 2 tbsp, but they probably won’t brown and will taste worse.

How to Cut Fennel for Roasting
The best way to cut fennel bulbs for roasting is in cubes to get the most surface area for browning and caramelization. It’s easy to do:
- Trim the stems. and sharp knifeCut off the stems of the fennel bulbs.
- Remove both ends. Trim off the end of each bulb.


- Cut lengthwise. Cut each fennel bulb in half lengthwise.
- Chop. From the bulb halves, slice lengthwise into 1/2-inch thick slices or wedges.


How to Cook Fennel in the Oven

- season. Place the chopped fennel in a large bowl. Gently toss in the olive oil, salt, pepper, and garlic powder until evenly coated.
- transfer. Put the fennel slices in a bakeware and spread in a single layer.
Tip: Make sure each piece touches the pan.
Crowding the pan will cause the fennel to be steamed instead of roasted. Make sure there is enough room to allow for proper browning.


- bake. Cook the roasted fennel recipe in the oven until fork tender and caramelized.
Tip: Flip the fennel if you can.
If desired, you can flip each wedge over for 20 minutes to evenly caramelize both sides, but a quick stir will work just as well.

- Reheat: Preheat oven to 350°F. Toast the remaining fennel on a baking sheet for about 10 minutes, or until warmed through. Microwave can also be used if desired, but you will lose any crispy edges.

Preheat oven to 400°F (204°C).

Cut off the stems of the fennel bulbs and trim the end of each bulb with a trimmer knife. It’s important to keep the bottom of the bulb intact so you can cut into wedges.
