- milk – Any kind of milk will do. Avoid plant-based milk as it is water-based and does not add richness.
- Dijon Mustard – Stone ground mustard also works. Do not use American yellow mustard for this.
- Pork Sausage – Use your favorite type.
- Yukon Gold Potatoes – Auburn is a great swap. Even baby potatoes will work.
- salt and pepper – I prefer kosher salt and fresh black pepper.
- spinach – For convenience, you can use baby spinach, or you can use regular chopped spinach.
- Parmesan cheese – Make sure it's freshly ground and not bottled.
How to Make Sausage Potato Frittata
Frittata is as easy as scrambled eggs but doesn't require any stirring. Scroll to the recipe card at the bottom of the post for more detailed instructions.




- Prepare the mixture. Preheat oven to 350F. Place eggs, milk, and Dijon in a large bowl and whisk until smooth. Set it aside.
- Brown sausage. Place a large skillet over medium-high heat. It must be oven safe. Add sausage and cook until browned, 5-6 minutes. Use a spatula to break it up while it cooks. Remove from heat and set aside.




- Boil the potatoes. Add potatoes to the same skillet and cook until lightly browned and tender, 5-7 minutes. Don't cook them for too long as they will lose their texture.
- Combine everything. Return sausage to skillet. Add spinach and cook 5 minutes more or until wilted.




- Add eggs. Pour in the prepared egg liquid. Gently swirl the skillet so that the eggs evenly coat the potato mixture. Cook for about 4 minutes without stirring.
- Bake it. Top with Parmesan cheese and carefully place the skillet into the oven. Bake for 10-12 minutes or until set.
- Serve. Remove from the oven and serve immediately.
Tips and variations

- Make it cheesy. Sprinkle 1/2 cup shredded cheddar or melted cheese over the potato mixture and add the eggs for a cheesy flavor. Shredded feta or goat cheese also works.
- Add more vegetables. If you want to make your frittata heartier, mix 1/2 cup chopped asparagus, roasted bell peppers, mushrooms or caramelized onions into the skillet.
- Leave on stove. If you don't want to use the oven, reduce the heat to low and let the frittata cook for 4 minutes. Add the Parmesan cheese as usual and cover the pan. Cook for another 10-12 minutes or until eggs are set.

How to store and reheat leftovers
I always make two batches, one on the weekend and one to reheat throughout the week.
- refrigerator: Store in an airtight container for up to 5 days. You can also slice it and place each piece in a ziplock bag for later breakfast on the go.
- refrigerator: Wrap the whole thing twice in plastic wrap and once in foil. Place in a freezer-friendly bag or container. Freeze for up to 3 months. Thaw in the refrigerator overnight or reheat directly from frozen.
