Tuna Steaks:
Tuna steak recipes can use a variety of tuna, including yellowfin, albacore, bluefin, and bigeye. Tuna and albacore tuna are most commonly used on the grill because they have a firm texture and a mild flavor that make them suitable for grilling. Bluefin tuna has a rich, buttery flavor and a higher fat content, while bigeye tuna has a lighter flavor and slightly softer texture. Look for bright colors and a firm texture, as this indicates that the fish is fresh and will sit well on the grill.
Tuna Steak Marinade:
- coconut aminos – I use it as Alternatives to Soy Saucebut you can also use low sodium soy sauce in this recipe.
- sesame oil – Sesame oil pairs well with other flavors in this recipe, but if you don’t have sesame oil, you can use olive oil or another neutral oil.
- garlic – Fresh minced garlic will give the best flavor to your tuna steak marinade, but you can use 1 1/2 tsp canned minced garlic For your convenience, if you will.
- fresh ginger – Provides a unique slightly spicy flavor that pairs perfectly with the salty and slightly sweet flavors of the marinade.
- Honey – Adds a touch of sweetness.I prefer to use Zero Sugar Honeybut regular also works.
- sea salt and black pepper
- red pepper flakes – Bring a touch of heat and spice! You can substitute cayenne or paprika if you like.

How to Grill Tuna Steaks

- Mix the marinade. In a small bowl, whisk together tuna steak marinade ingredients: coconut aminos, sesame oil, garlic, ginger, honey, salt, pepper, and red pepper flakes.
- Marinate the fish. Place tuna fillets in a ziplock bag and pour marinade over top. Marinate in the refrigerator until ready to grill.


- Prepare the grill. clean your grill to grill Use an oiled paper towel. Preheat grill to medium-high heat.
- Grilled Tuna Steaks. Place the tuna on the grill, cover, and cook until the internal temperature reaches about 125°F. (If you don’t have a grill, you can also cook on a preheated griddle on the stovetop.)

Grill tuna steaks for 2-4 minutes per side (2-3 minutes for 1-inch thick, 3-4 minutes for 1.5-inch thick), or until internal temperature reaches 125°F.
Tips for the Best Grilled Tuna Steaks
Now that you know how to sear tuna steaks, let’s dive into some tips for achieving the perfect sear and flavor in seared tuna.
- Do not marinate for too long. In general I don’t recommend marinating fish for more than 30 minutes (the fish will spoil after that) Ceviche from the acid in the marinade), but this marinade does not contain any acidic ingredients, so a maximum of 2 hours is fine.
- Grill properly. To avoid steaks falling apart or sticking, make sure the grill is well-oiled, preheat the grill for at least 10 minutes, and don’t flip the fish until it comes off the grill easily.
- Avoid overcooking. Tuna steaks are great with medium-rare or medium-rare steaks (red or pink in the center). Otherwise they will dry out and lose their flavor.
- Use a thermometer. For best results, use the regular or Probe Meat Thermometer Check for doneness. The ideal internal temperature away from heat is 125 degrees Fahrenheit.
- Let’s rest. Because heat can cause juices to squeeze out of the fish, letting the fish rest for a few minutes after grilling will allow the fish to reabsorb some of the lost juices.
