For the Shrimp Fajita Marinade:
- fajita seasoning – This is a mixture of chili powder, cumin, paprika, garlic powder, onion powder, and several other spices.I make my own shrimp Fajita Seasoning, but you can use any packaged mix if you want – just watch the mix with added sugar or fillers. My seasoning includes salt, but if you don’t have it, add 3/4 tsp salt per pound of shrimp. Taco Seasoning Will also work in a pinch!
- olive oil – We also use some olive oil to cook the fajita vegetables. You can swap it out with any other neutral oil like avocado oil if you like.
- lime juice – Fresh lime juice is delicious here, but you can also use bottled lime juice for faster preparation.
- minced garlic – freshly chopped, or use canned garlic For convenience.
For Fajitas:
- shrimp – I used 30/40 prawns, peeled and deveined, with tails. (I recommend cooking with tails because that makes the shrimp tastier, even if you won’t eat the tails.) You can make larger or smaller shrimp, but the cooking time will vary slightly.
- onion – White onion is the classic choice, but other colors are also available.
- Bell peppers – Use your favorite color chili with smooth skin and no nicks.
- olive oil – Make delicious caramel char on veggies. Likewise, other neutral oils will work just as well.
- decorations – lime wedges and fresh cilantro, optional.
How to Make Shrimp Fajitas

- pickled. In a bowl, combine shrimp, homemade fajita seasoning, 2 tablespoons oil, lime juice and minced garlic. Toss to coat and set aside to marinate.
Tip: Marinate the shrimp for at least 15 minutes, but no more than 30 minutes.
If marinated for longer than 30 minutes, the shrimp will turn into ceviche and be “cooked” by the acid in the lime juice.
- Cook vegetables. Heat remaining oil over high heat frying pan Medium to high temperature. Add peppers and onions. Sauté until soft, stirring occasionally. Set aside and cover to keep warm.
- Boil shrimp. Using the same pot, add the shrimp and cook until pink and opaque, turning once.
- Finish. Add the onion and peppers back to the pot and toss to coat. Garnish if desired and serve immediately.
Storage Instructions
Store leftovers in an airtight container in the refrigerator for 3-4 days.
Reheat in a warm pan (or microwave at 50% power if desired). Be careful not to overheat the shrimp, this will make them springy.
Can you freeze shrimp fajitas?
While you can safely freeze cooked shrimp rolls for later use, they are best enjoyed fresh. The texture changes after thawing and the shrimp are more prone to overcooking.

In a large bowl, combine shrimp, fajita seasoning, 2 tablespoons (29 ml) olive oil, lime juice and minced garlic. Stir the ingredients until the shrimp are well coated.
