Ingredients and Substitutes
This section explains how to choose the best ingredients for saga yakiniku shrimp, the role each ingredient plays in the recipe, and substitution options. For measurements, see recipe card below.
- olive oil – I used Extra virgin olive oilbut any neutral cooking oil such as avocado oil will do.
- shrimp – You need raw, peeled, gutted shrimp. You can leave the tail on while cooking for extra flavor, or remove it (like I do) before cooking for convenience. I used medium sized shrimp, but jumbo, jumbo, or even king prawns would work too – cooking time will vary.
- onion – Red onions are the most common in shrimp saga, but you can also use white or yellow onions if you have them on hand.
- garlic – Use freshly chopped garlic for best flavor, or use less than 2 teaspoons of garlic canned garlic For convenience.
- diced tomatoes – use the canned kind, together with the liquid to form a sauce. You can also use other forms of canned tomatoes, such as crushed tomatoes or even tomato paste.
- lemon juice – Adds a tangy flavor.Fresh works best, but bottled Just for convenience. You can substitute other acidic ingredients, such as white wine vinegar, red wine vinegar, or balsamic vinegar, if desired.
- Honey – Add a little sweetness, but this is optional. You can use regular or unsweetened honey.
- herbs – fresh thyme leaves, fresh parsley and dried oregano. You can alternate fresh and dried herbs, but you need to use 3 times as much fresh as dried and vice versa.
- paprika – Adds subtle heat and flavor. You can substitute paprika for flavor without the heat, or crushed red pepper flakes for a spicier alternative.
- sea salt and black pepper
- feta cheese – This is optional and can be omitted if you want your shrimp saga naki to be dairy-free. I highly recommend adding it if you can, it brings the dish together!
Variation: add ouzo!
This ingredient is common in traditional Greek shrimp saganaki, but I didn’t have it. If you want to add it, just add a little when making tomato sauce. (It evaporates when reducing the sauce, leaving behind a warm fennel flavor.)

How to Make Saga Shrimp
This section shows how to make Greek Shrimp, with step-by-step photos and details about techniques to help you visualize it.For full instructions, including amounts and temperatures, see recipe card below.
- Cook the shrimp. heat oil in a pan large frying pan Use medium-high heat. Add shrimp, onion and garlic. Cook, stirring occasionally.
- Make the sauce. Add diced tomatoes, lemon juice, honey (if using), thyme, parsley, oregano, paprika, salt, and pepper. Stir to combine and reduce heat. Cook the Greek shrimp saganaki until the volume of the tomato sauce is reduced by half.

- enjoy. Remove from heat. Sprinkle with feta cheese and more parsley and thyme if desired.

Variation: Bake in the oven!
I don’t like this option much because it takes longer, but it’s more hands-off. Cook sauce in skillet without shrimp until thinned, then add raw shrimp and sprinkle with feta cheese. Bake until the shrimp are pink and opaque.
storage instructions
- shop: Store leftovers in an airtight container and store in the refrigerator for up to 5 days.
