This super simple recipe is one of my all time favorites. It is delicious, very filling, and very suitable for the whole family. Cheese broccoli baking is suitable for freezing, but also suitable for vegetarians. Such a quick and easy recipe preparation makes it an ideal choice for weekday meals when you don’t have much time on hand.

500 g broccoli florets
200 g cherry tomatoes, cut into quarters
8 scallions, chopped
200 g fat-free cheese with onions and chives
2 large eggs beaten
3 cloves garlic crushed
Salt and freshly ground pepper
110 g reduced-fat cheddar cheese, grated
4 tablespoons chopped parsley
method
1 Preheat the oven to 220°C/200°C Fan/gas mark 7
2 Put the broccoli in a large saucepan and boil it in boiling water for 2-3 minutes. Drain the water, transfer to a bowl, and set aside.
3 Add the green onions and cherry tomatoes to the broccoli, stir well, and then transfer to a heatproof dish.
4 Whisk the eggs, cheese and garlic in a separate bowl. Keep stirring until the mixture becomes smooth. Season to taste, then add parsley.
5 Pour the egg mixture on top of the vegetables and stir gently to ensure that the ingredients are evenly covered. Sprinkle cheddar cheese on top and bake in the oven for 15-20 minutes.
6 Take it out of the oven and serve.

- 110 G Reduced Fat Cheddar Cheese Grated
- 4 Spoon Fresh parsley Chopped
- Salt and freshly ground pepper Optional
