Healthy Spinach Basil Pesto

Everyone needs a good pesto recipe in their back pocket, and this one is one of my favorites! Not only is this recipe delicious and easy to make, but it also adds some healthy greens by using a combination of basil and spinach.

Makes about 1 cup! For larger batches, see below!

  • Basil: A must-have ingredient for delicious, authentic pesto.
  • Baby spinach: Adds nutrients and bulks up the pesto!
  • Pine nuts (or nut of choice): Cashews, walnuts, or even almonds work well. Use your budget or existing resources.
  • Garlic: Fresh garlic will add lots of flavor to your pesto. Don't skip it!
  • Salt + Pepper: Of course!
  • Olive oil: You'll use this and more to make sure your pesto isn't dry!
  • Parmesan cheese (optional)

I usually make this size and freeze some in ice cube trays!

  • 2 cups fresh basil
  • 3 cups spinach
  • 1/2 cup pine nuts
  • 2 cloves garlic
  • A big pinch of salt and pepper
  • 1/2 cup extra virgin olive oil
  • 1-2 tablespoons warm water (if needed)
  • 1/4 cup Parmesan cheese, Elective
  • red pepper flakes, Go and try it
  • Squeeze fresh lemon for extra flavor/flavor!

How to cleanse herbs

Whether they come from the supermarket, farmers market, or your own backyard, herbs can be very dirty and gritty. The best ways to cleanse herbs are:

  • Fill a large bowl with clean, cool water.
  • Soak the herbs in the water and let all the dirt and grit sink to the bottom.
  • Pick up the herbs and set aside. Empty the water, refill it, and repeat until the bottom of the bowl is clear of sand or dirt.

How to prevent it from turning brown

Pesto turns brown when fresh herbs oxidize from prolonged contact with oxygen. There's no harm in eating brown pesto, but it may smell off and be unpleasant to look at. To prevent browning, you can float some olive oil over the pesto in the container. Make sure the pesto is completely covered. This creates an airtight seal and prevents the pesto from browning immediately.

You can freeze for up to 3 months. The longer fresh herbs are frozen, the less potent they become. To thaw, place in the refrigerator overnight.

This bright pesto goes great with so many dishes! Great with chicken, turkey and seafood. You can use pesto on pasta, rice, salads, as a dip or spread, with grilled meats or vegetables.

  • 1 cup fresh basil
  • 1 1/2 cup spinach
  • 1/2 cup pine nuts See comments

  • Add all ingredients except olive oil and warm water to a food processor or high-speed blender. Pulse until smooth consistency is reached. NOTE: You can definitely use food processor or a high speed mixer here!
  • With the motor running, drizzle with olive oil. If desired, you can add a tablespoon of hot water as needed to make a smooth pesto.

  • Taste and adjust seasoning.

  • Use immediately or store in an airtight container for up to 1 week.

  • You can substitute pine nuts for another nut, such as slivered almonds or cashews.
