  • Make sure the egg whites are at room temperature. This will help them whip more easily.
  • Pay close attention to the baking time. Cookies can brown quickly from done.
  • Extend drying time if necessary. Drying time may vary depending on the humidity in your home. They can be left in a closed oven for a day or even overnight. More time helps develop their crisp texture.
  • Larger cookies take more time to bake. The smaller ones will only take 45 minutes in the oven, but the larger ones will take more time.
