I love a good salad. Salads are the perfect way to add variety and liven up your lunch routine. Summer salads are especially delicious and easy to make. Especially if you can incorporate the best seasonal ingredients. With the right combination of flavors and textures, you can create a mouthwatering salad that will keep you satisfied and energized for the rest of the day.
I also like that anything goes. You can add as little or as much of your favorite ingredients as you want, no real guideline.

This easy peach and chicken salad is so refreshing for summer. This is my favorite lunch and I hope you enjoy it as much as I do.

- Iceberg lettuce or green leaves of your choice
- peach
- Extra Delicious Cooked Chicken (or Just Cooked Chicken)
- Shallot
- cucumber
- feta cheese
method
- Start with a green base in a salad bowl. In my case, lettuce.
- Dice the peaches and add to the lettuce. (grill your peaches if you like your salad hot)
- Add the chopped onion, cucumber and cooked chicken pieces. (I used Asda’s extra delicious chicken)
- Top with crumbled feta.

Can I add something else?
sure! That’s the beauty of salads, just about anything will do. You can add peppers, shallots instead of red onions, cheddar cheese instead of feta, or you can have different meats or even no meat at all.
You can of course add more vegetables such as kale, spinach or broccoli. I add spinach to salads from time to time.
Couscous and quinoa are another great addition. The options are endless.
Do I need dressing?
No, I prefer the salad without the dressing as I feel it takes away from the freshness. Feel free to drizzle with a little balsamic vinegar if you like it a little more tangy, though. I like to make it quick and easy with infused olive oil and a little lemon juice. Or just spray with a small store-bought dressing of your choice.
Can I prepare salad and store it in the refrigerator?
You can prepare and store salad in an airtight container in the refrigerator. However having said that, if you are going to add tomatoes and cucumbers, I would probably add them at the last minute to keep everything from getting soggy.
Keep lettuce dry. If you’re using lettuce in a salad, make sure it’s thoroughly dry before packing it into a container. Wet lettuce wilts quickly, so use a salad spinner or pat dry with paper towels.
Also, if you’re using dressings, add them right before you’re ready to eat.

Refreshing and super quick Peach Chicken Salad that’s full of summer vibes!

- 1 Extra delicious cooked chicken nuggets (or regular cooked chicken)
- 1/2 Shallot Chopped
- cucumber (chopped 3-4 decent slices)
- feta cheese
